Quick Tuna Salad

I just made this and in one bowl I mixed 'dill' relish and in another bowl I mixed 'sweet' relish, the dill relish with the sweeter Miracle Whip was so much better!! Also, this girl only uses StarKist Solid White Albacore Tuna. Any other kind besides solid white albacore is just mushy and to fishy.

Red Skinned Potato Salad

Made how stated, except added one-package dry ranch dressing mix and a little milk to the mayo to thin it out, and added scallions in stead of just plain ol' onion. Yummy!

Cannoli Cake Roll

2 Things: Spray jelly roll pan, then top with parchment paper, then spray the parchment paper. Spraying the pan before the parchment paper goes down helps the paper stay in place, especially helps the corners. (2) For the frosting, the ingredients listed has 1 tablespoon white sugar, but there is nothing in the instructions as to where to use the white sugar?? I added it to my chopped pistachios before sprinkling on the cake. It just sounded like the right thing to do! Delicious cake roll!

Double Layer Pumpkin Cheesecake

My son and daughter-in-law kept asking me if I bought this dessert... They took one that I made to a party and everyone was raving how good and nice it looked, so this lead them to believe I had to have bought it! Serve with whipped topping and sprinkle with cinnamon sugar.

Crustless Cranberry Pie

This was just about the EASIEST dessert recipe one could ask for! It is really good and moist! I love, love, love cranberries because they are sour and pair well with sweets. I am not the biggest sweet fan, so anything with cranberries is fabulous!! Thank you Jean for this recipe:)

Guacamole

Love it. For a change make it with the juice of one lemon instead. Real refreshing! To pick a ripe but not rotten avocado, pull the stem off and make sure it is green, if it is not bright green, pick another one out.

Japanese Fusion Guacamole

This was very unusual and very tasty. I only used 2 chopped shiso leaves and 1/2 tea. wasabi paste. I actually like it better with lemon juice (1/2 lemon squeezed). Also, try first with 1 jalapeno, add more if desired. For those that don't know what a shiso leaf is... It's a Japanese mint leaf. Each leaf is about 3" big. They usually come like 8 leaves per carton. They are usually found in the produce section of a Japanese store.

Spinach Pomegranate Salad

I toast the walnuts first. The best dressing for this is if you can find pomegranate molasses and whisk in some EVOO, little sugar and a dash of S & P. You can also buy pomegranate seeds already cleaned and ready at Trader Joes!

Swordfish a la Siciliana

I purchased 2 swordfish filets from Fresh Market, they were thick, so I cut them horizontally and made them into 4 perfect portion filets. I seasoned and seared both sides of the fish first. I then covered them for later. Once the sauce was done, I added the seared swordfish and topped with raisin sauce and baked for only 12 minutes. I omitted the pine nuts (allergies). This was VERY moist and flavorful swordfish (normally a drier fish). I cook a lot and this received rave reviews ~ mostly how incredibly moist it was.

Superfast Asparagus

I rubbed olive oil then the cajun seasonings... Really good flavor and very fast! Veggies are still firm and full of flavor. Who would have thought it to be this simple and tasty!

This recipe is right on, except I don't add any water, and zest the entire orange. I also found out that most people don't like any almonds in their cup! They do like a few raisins! Merry Christmas!!!!

Great idea with shrimps. I did the same as the last person, added breadcrumbs and also added chopped mushroom stem into butter & a little bit of oregano. Serve with Pinot Grigio and BAM!

Emily's Famous Hash Browns

Love them. I add chopped scallions, the green parts look nice and taste good. I also serve with homemade applesauce. Cut up apples (skinned) and put in sauce pan with little water and sugar to taste and it will boil down a little. Yummy!

The ingredients were right on. The best flavor comes when you slightly blacken the tomatillos & jalapenos under the broiler, then mix all your ingredients. If you don't have shallots, use 1 white onion (slightly blacken this also).

Chocolate Roll I

Skip the flouring on the parchment paper. Just spray the pan first, then put the parchment paper on top, then spray the parchment paper. Other reviewer is correct - undercook at least 5 minutes less!! I then flipped it over on a pillow case with powdered sugar sprinkled on the pillow case (do this slowly so sugar doesn't fly everywhere). Roll it up in the pillow case - let it cool and then unroll and fill. For the filling I used 1 stick of cream cheese, 1 cup powdered sugar, 2 tablespoons of soft butter & 1 teaspoon of vanilla. Roll it up and put in tin foil and chill for at least one-hour. Put on a plate and sprinkle it with powdered suger and serve. I serve mine with whipped cream on top of each slice and then sprinkle a little cinnamon sugare on top. YUMMIE!!
