About this Cook
When time permits, I love to turn on the music, get a glass of good beer and cook away in the kitchen! I love to create the perfect table setting from things in my yard for each season. I enjoy cooking for family and friends. I like to create my own recipes and some of them will be entered in food contests (soon:)
My favorite things to cook
Mexican is so good, as we love our food with a kick to it, so I do tend to cook this type of ethnic food the most. My Chile Rellenos are better than most Mexican restaurants & so is my Chile Verde! Maybe someday I will post those two recipes... I really excel at creating my own appetizers & salads. I have an herb and pepper garden that I use frequently during the summer.
My favorite family cooking traditions
Making big dinners with lots of variety. I love to decorate my house to each holiday/season. I want a person to feel warm and inviting when they come over for dinner. I have been known to throw some really good themed parties (i.e. MASH and a Chinese Party). I go all out to buy supplies and decorate beyond what most people would do, but it is so much fun to do it!
My cooking triumphs
Prime Rib - I finally mastered it! Chile Rellenos - Better than 95% of the Mexican restaurants out there! Pumpkin Cake Roll - It's rockin delish! Waffles - No one's compare! Appetizers - The varieties I create are endless! I've had several burns through my years of cooking, and this will not stop as I move so fast through the kitchen to finish and put so many dishes on the table!
My cooking tragedies
Making all brand new recipes for company dinner that I think sound really good and they are all just okay! You would think I would learn from this... But, I am so darn adventerous, I know I'll end up doing it over and over again...

Red Skinned Potato Salad
Made how stated, except added one-package dry ranch dressing mix and a little milk to the mayo to thin it out, and added scallions in stead of just plain ol' onion. Yummy!

Cannoli Cake Roll
2 Things: Spray jelly roll pan, then top with parchment paper, then spray the parchment paper. Spraying the pan before the parchment paper goes down helps the paper stay in place, especially helps the corners. (2) For the frosting, the ingredients listed has 1 tablespoon white sugar, but there is nothing in the instructions as to where to use the white sugar?? I added it to my chopped pistachios before sprinkling on the cake. It just sounded like the right thing to do! Delicious cake roll!

Double Layer Pumpkin Cheesecake
My son and daughter-in-law kept asking me if I bought this dessert... They took one that I made to a party and everyone was raving how good and nice it looked, so this lead them to believe I had to have bought it! Serve with whipped topping and sprinkle with cinnamon sugar.
