Creamy Spiced Coleslaw

Very good! I like my coleslaw a bit drier, so I cut the sauce in half. Thought that might have been a mistake, but after about 30 minutes in the fridge, it was perfectly creamy without being goopy. Not too tangy, not too mayonnaisey - just right! Will make again.

Big Ed's Cajun Shrimp Soup

I made this as directed except for 2 things. I added a can of lump crab meat, which was excellent! Also, I went to my pantry to add the rice, and found out I didn't have any. I already had the soup going, so I ended up substituting the rice with orzo. Turned out just fine and my husband was happy because he doesn't like rice very much. To me, this soup tastes a lot like jambalaya. I will definitely make again!

Sorta Salisbury Steak

Peanut Butter Popcorn

Awesome! I did read the reviews and reduced the brown sugar and increased the peanut butter. I also don't eat microwave popcorn, so I make it with 1/4 cup popcorn kernels, popped; 1/4 cup butter; 1/4 cup brown sugar; 1/2 a bag of mini marshmallows; 1/4 cup + 2 T peanut butter and 1/4 tsp kosher salt. I tried it once stirring in mini reese's cups, but they just melted and made a mess. That batch, I pressed into a cake pan and cut into bars. I also have tried it with peanuts and milk chocolate chips - very good! I picked this recipe specifically because I wanted ooey, gooey popcorn and once I saw that the recipe has marshmallows, I knew I was on the right track.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This is a 5-star recipe with a few changes. First of all, I couldn't bring myself to use an entire stick of butter, so I cut back to 3 T. I followed other reviews and used 8 oz. cream cheese, but that was too much so next time I will use 6 oz. I also followed the suggestion to use 1/3 cup milk + 1/3 cup white wine instead of the water. I doubled the shrimp to 1 lb, and used whole-wheat linguine. My husband normally just thinks these types of dishes are okay, but he really liked this one, as did I. I sent the recipe to my sisters (with my changes) and they and their families both loved it, too. Will definitely make again!

Cajun Pasta Fresca

GREAT recipe! The only change I made was to add some chicken. I cooked the chicken in the olive oil with some of the seasoning, then removed it from the pan and followed the recipe as directed, adding the chicken back in the last minute the tomatoes were cooking. I also couldn't find whole wheat vermicelli, so I used whole wheat thin spaghetti. I used Mrs. Dash Extra Spicy seasoning to cut back on some of the salt. I will definitely make this again! I might try it this winter with canned petite diced tomatoes... Easy, yummy and healthy!

White Chocolate Raspberry Cheesecake

My husband doesn't like cheesecake, but he said this is the best he's ever tasted. I followed the advice of some other reviewers and used two cups of oreo crumbs and reduced the sugar to 1T for the crust. I also followed the advice to blend the raspberries and water together, sieve, and then make the sauce. I only used 1 T sugar in the sauce instead of 2. I melted the chocolate with the half and half in the microwave. So very good and worth all the effort to make!

Italian Confetti Pasta Salad

I chose to make this for a pot-luck for my husband's work because of the good reviews, and then really liked it and had to make some for myself! I did like some other reviewers and only used 3/4 cup light mayo. I made it once with red bell pepper instead of yellow. The dressing is very good and will go well with whatever veggies you might want to use.

I made this because I thought my husband would like it, and was surprised when I liked it, too! I don't normally like olives, but this recipe is really good and simple to make. I only used 2 cups of cheese.

Spicy Sausage and Rice Casserole

A little too spicy for me, but still a good recipe. Very easy to prepare - I put it together in a casserole in the morning on a day I had to work late, and my husband put it the oven when he got home. Will make again with less cayenne.

Lemon Mushroom Herb Chicken

This recipe is one of my favorites. I usually just cut the chicken breast in half instead of into cubes, and I only use a tablespoon of butter. I also usually don't use the parsley, capers or lemon zest as this is a great meal I can make with things I normally have in my pantry (and I don't like capers). My husband likes this over noodles, but I like rice.

Fettuccine with Sweet Pepper-Cayenne Sauce

I LOVE this recipe! The first time I made it, I didn't think it was turning out right because the sauce is thin, but once you add the pasta and the cheese, it's perfect. I usually only use 1/4 tsp cayenne and a I saute a chicken breast in cajun seasoning before I saute the peppers. I also sometimes add zucchini and/or mushrooms and use linguine noodles. One of my favorites!

Streusel Topped Blueberry Muffins
