Old Fashioned Rhubarb Bread Pudding

This was frugal and fantastic. I used up all the leftover hot dog buns, bread heels and dried out whole wheat rolls that I had accumulated in the freezer and it was delicious. Followed the directions to a "t" and maybe used 2 1/2 cups of rhubarb, diced 1/2 inch. Put a dab of vanilla ice cream on it and we ate it for dessert. Definitely will make this again!

Unbelievable Spinach Calzones

Angela's Awesome Enchiladas

Delicious. I put the chicken in the crockpot with spices and let it cook for 6 hours. Shredded easily and then added the soup and sour cream. I made 8 large burritos with that filling as written. My kids loved this recipe! Not too spicy but great flavor. I also used green sauce. Will use this one again for sure!

Ham and Veggie Quiche

I thought this was pretty good and healthy. I used peas, a box of frozen spinach, onion and a couple of diced potatoes (cooked). Quite tastey! Will definetly use this idea again and mix up the vegies some more. Fed our family of 5 but no extras.

Tangy Slow Cooker Pork Roast

Very good and easy since I had all the marinade ingredients. Next time I will brown the roast before putting in the crock pot. Maybe it will help the meat to stay more moist.

Grilled Tri-Tip with Oregon Herb Rub

Delicious! I used a little less salt than the 1 TBSP and followed the cooking directions. Meat needed 30 min. at indirect to get to our desired taste. Will make again.

Fiesta Salad

I used brown rice and a little less on the mayo. I also added cilantro to the salad. Next time I would even use less mayo and add some salsa. But base recipe was a fun one for an easy dinner. Served with corn and black beans.

Pumpkin Cake I

Yummy! Made 12 cupcakes and one 9 inch round. 22 min at 350 was perfect for the cupcakes. Frosted with cream cheese frosting and put a candy corn on each one. Super easy and cute treat for our Harvest Cake walk at church.

Easy and so delicious. I made it tonight using 1 cup chopped tomatoes from a can rather than fresh and still fantastic! Everyone ate it up. Perfect on a burrito shell as well.

Parmesan Basil Biscuits

I made these tonight and thought they were fantastic! Not dry as others have said and even without butter or shortening, they were tender. I worked hard at not over mixing! I think this is the key. Will make these again and again for a quick bread in the summer months.
