New York State Muffins

I used only 1 cup of sugar, 2 1/2 tsp baking powder which was plenty and didn't have carrots so i subbed in 1/3 cup vanilla yogurt for moisture. They were excellent. I will try these again with the carrots. Great way to use the cranberries that I had in the freezer

Unbelievable Spinach Calzones

I added vegetables to the filling and made some bread dough in my bread machine and this was excellent. A great way to sneak spinach into the family.

Fiesta Salad

I used brown rice and a little less on the mayo. I also added cilantro to the salad. Next time I would even use less mayo and add some salsa. But base recipe was a fun one for an easy dinner. Served with corn and black beans.

Ham and Veggie Quiche

I thought this was pretty good and healthy. I used peas, a box of frozen spinach, onion and a couple of diced potatoes (cooked). Quite tastey! Will definetly use this idea again and mix up the vegies some more. Fed our family of 5 but no extras.

Fantastic just as written! My family loved it and we will be taking free pears from family to make this again. I prefer the texture to the pear pies that have cream or eggs in the filling

Grilled Tri-Tip with Oregon Herb Rub

Delicious! I used a little less salt than the 1 TBSP and followed the cooking directions. Meat needed 30 min. at indirect to get to our desired taste. Will make again.

Tangy Slow Cooker Pork Roast

Very good and easy since I had all the marinade ingredients. Next time I will brown the roast before putting in the crock pot. Maybe it will help the meat to stay more moist.
