Cajun Potato Soup

Since this is such a rich soup and to cut the fat I did the following - 1 Tbsp evoo to saute the onion & garlic, 1 lb of andouille sausage, 4 cups of chicken broth and 2 1/2 cups of fat free evaporated milk. I follow WW and 12 servings came out to 5 pts. and 8 servings was 7 pts.

Spinach Muenster Quiche

I thought this was awsome! So easy to make and even better because there is no crust. I did use shreaded mexican blend cheese for the 'crust'. Also sauted fresh spinach in garlic and added 2 turkey sausage I took out of the casing. I will be making this over and over. Fantastic recipe!

Cha Cha's White Chicken Chili

This recipe rocks. I have made it several times. The only thing I do different is puree 1 1/2 cans beans and leave the other 1 1/2 cans whole. It makes it nice and thick. Also, I don't mix the cheese in...I just sprinkle some on top at the end. Other than that it is a great recipe...just adjust the hot peppers to taste. Remember you can always add more, but you can't take them away.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This recipe is great! I made this last night. I didn't use all the butter it called for, but cooked the mushrooms in white wine and instead of cream cheese, I substituted Boursin garlic & herb cheese. Needed to add some pasta water at the end because mixture was thick. Fantastic. Will definately make again.

Rockin' Oysters Rockefeller

This was fantastic! The stuffing was to die for. I did leave out the mozzarella cheese because some people said it became too elastic. I had some left over stuffing and used it to make stuffed mushrooms the next day. Awesome. Will definately make again.
