Beef Barley Vegetable Soup

Reviewed: Jan. 1, 2006
Excellent and easy. I cooked 2 lbs. of chuck in crockpot for 5 hours the evening before I wanted to serve the soup. (Sprayed crockpot with Pam first.) After cooking, I smashed the beef into shreds (in the crockpot with a spoon.) Then, after sauteeing the vegetables, I put everything in the crockpot (including the uncooked pearl barley) and put the crock in the frig. I skipped the sugar, and used 2 extra cups of beef broth plus a couple generous dashes of Worcestershire Sauce. When I woke up the next day, I turned the crock on low and cooked the soup all day. Everyone loved it! I will make this again and again. After reading a few of the other reviews, I'm wondering if some of the reviewers who complained about mushy barley had inadvertently used instant barley in their soup. Whole pearl long-cooking barley holds up much better than instant barley.

No Sugar Apple Pie

Reviewed: Nov. 18, 2006
I love this apple pie. I make it with apple cider instead of apple concentrate, and it is awesome! My entire family begs for it. Just be careful of the amount of apple cider, or the pie will boil over like crazy. Cook it on a cookie sheet. This is the only apply pie that I make now.

Parmesan Chicken II

Reviewed: Aug. 2, 2007
My kids hated this. My husband said it was "OK." The drumsticks were goopy in the baking pan, and the bottom of the chicken was soggy. I'm going to try it again with chicken breasts on an elevated baking rack (so that the chicken doesn't sit in its own fat while baking). Also, my drumsticks were pretty large, and they required extra cooking time. Perhaps, that was part of the problem. I think the taste was good, but the texture and look of the chicken really turned my family off.

Sugar-Free Raisin Bars

Reviewed: Jul. 28, 2007
I make a lot of sugar-free recipes, and this one is excellent! These bars are moist, delicate, tasty, and very sweet. Don't skip the step of cooking the raisings and margarine in the hot water. This step really releases the sweetness of the raisins into the recipe, and the raisings will be SOOOO tender in the finished product. I actually am going to cut back on the splenda from 1/2 cup to 1/4 cup next time, as I don't like my food quite as sweet as this one was. Still 5 stars!

Dried Cherries, Pecans and Rosemary Brie en Croute

Reviewed: Dec. 11, 2008
We made this for Thanksgiving, because it looked so pretty. Out of 12 people, one loved it and the rest of us did not like it. I've had a "sweet" baked brie before that I loved, so I'll keep looking for another recipe.

Pineapple Stuffing

Reviewed: Apr. 25, 2011
This tastes like a buttery pineapple bread pudding, and we REALLY liked it with our Easter Ham dinner. When we first took the dish out of the oven, I thought it would be too buttery. The butter was bubbling all around the edges of the Pyrex glass dish. After sitting for 10 minutes, however, the butter was incorporated into the dish and it was perfect! Now the changes: we don't like really sweet food, so we cut the sugar by half. We also followed the suggestions to use half brown (1/4 cup) and half white (1/4 cup) sugar, as well as we sprinkled the top liberally with pumpkin pie spice. Baked for half the recommended time covered, and half uncovered for the other half. With these changes, it was a 5 star for us! We have added it to our "family" cookbook!

Whipped Cream Cream Cheese Frosting

Reviewed: Apr. 25, 2011
This is an absolutely wonderful frosting for those of us who do NOT like sickeningly sweet frostings! I took the suggestion to use 1 3/4 cup conf. sugar, instead of regular sugar. I froze the bowl and beaters for 15 minutes before whipping the cream to stiff peaks, and it was no problem at all. I then put bowl of whipped cream into the frig to keep it cold. After cleaning the beaters, I then creamed the room temperature cream cheese and sugar together in a different bowl, then beat in salt and vanilla. Again, no problem. Folded the whipped cream into the cream cheese mixture, and the result was wonderful! I had more than enough frosting for my 9" x 13" pan of carrot cake. If you are careful to follow the temperature directions, this is actually a very easy recipe. This is a keeper for me!

Cranberry Sweet Potato Bake

Reviewed: Nov. 27, 2009
Excellent and light recipe. Based on previous suggestions, I peeled, sliced, and layered raw sweet potatoes. Dumped the cranberries on top and mixed a little. Then poured orange juice mixture (made with Splenda instead of sugar) on top. Skipped the granola, because I ran out unexpectedly. Baked, covered! Wow! I will make every holiday. I don't understand why some say it is too sweet. It was light, tart, and not at all too sweet!

Boston Iced Tea

Reviewed: Aug. 2, 2007
This is absolutely terrific served icy cold! Intense full flavor. I used Splenda and 12 cold brew tea bags. I was hoping to cut down on the sweetener - but you really do need a full cup to counter the bitterness of the cranberry juice. I will be making this all the time. Just be sure to serve it VERY COLD. It doesn't taste that great lukewarm.

Chunky and Creamy Potato Salad

Reviewed: Jun. 9, 2011
My family really didn't like this potato salad. My boys ate it, but they dumped barbecue sauce on it to "kill" the taste. I was surprised, because I was hoping they'd like the ranch dressing base. They love ranch dressing on salads, but it didn't work for them with the other ingredients. Sorry.

Cheesy Ham and Hash Brown Casserole

Reviewed: Jan. 4, 2014
Definitely 5 stars! I split the recipe into two parts, and made one with ham and one without. Both were very good - some members of family preferred with and some preferred without. Strong sour cream taste, which we all loved! Will make again and again. DO NOT SUBSTITUTE THE POTATO SOUP - it will result in a very different taste. I used cubed hash browns, and I liked it that way.

Oven Brown Rice

Reviewed: Apr. 15, 2011
This is a 6 star recipe! I make it with bouillion cubes when I'm out of broth, and it's still wonderful. All 4 kids and my husband are always asking me to make it again! However, I only use 1 cup beef broth and 1 cup chicken broth, with garlic powder instead of salt. I also cook it covered. It makes a big difference.

Tomato Barley Soup

Reviewed: Mar. 13, 2010
I found this way too bland for my taste, and I'm a barley lover. I'll experiment with adding some spices, but I won't make it again as it is.

Campbell's® Green Bean Casserole

We don't like the soy sauce. We threw it out. With 1 tsp Worceshire sauce instead of the soy sauce, it's a 5 star recipe.

Downeast Maine Pumpkin Bread

I've been making a honey version of this break for years. Skip the water, replace the sugar with 1 1/2 cup honey, increase ginger to 1/2 tsp. The result is WONDERFUL !!

Ham Bone Soup

Reviewed: Dec. 30, 2005
Good soup recipe, with modifications. I left out the green pepper (since we don't like it). I used a huge meaty hambone, and the soup was salty because of it. However, that didn't bother me. The broth, however, seemed kind of lifeless. After I added 8 oz. of tomato sauce, we really like the soup! I'll make this again, but I'll definitely add the tomato sauce.

Chewy Peanut Butter Brownies

Reviewed: Feb. 1, 2014
I love this recipe! I cut the sugar down to 1/2 cup, because I don't like things too sweet. It is still quite sweet. The brownies are a bit delicate and cake-like, and they were moist. Will make again and again. I cooked for 35 min. in a 350 degree oven. Have also topped with semi-sweet choc chips and peanut butter chips for a great result.

Romanian Apple Cake

Reviewed: Aug. 19, 2013
The cake was hard and heavy. I followed the recipe exactly. My batter was the consistency of cookie batter. What did I do wrong? I may try again and bake about 30 minutes. I might also try with apple sauce, instead of apple pieces.
