Thai Coconut Chicken

i knew from the ingredients list and the other reviews this was going to be bland if i didnt do something about it. so, taking a bit of everyone elses advice, i used a normal brown onion - chopped into slices and sauted in normal and sesame oil. i also added two minced cloves of garlic. i then added the chicken, browned it for a moment, then i added 2 tablespoons of curry powder and 2 teaspoons of garam marsala. i added a tin of coconut cream, snow peas, asparagus and very thinly julieneed carrots and let the whole lot simmer gently whilst i cooked the rice - i use basmalti because it is extrodinarily low carb. i threw in a pinch of salt whist cooking and then salted lightly once i served. FANTASTIC! use this recipe like a base and go wild. it really is that good. yes its a thin sauce, but i like it like that.

Lamb Masala with Jeweled Rice

definitly a nice CURRY dish. i loved the taste, but might add a little bit of chilli powder for some zing next time.

Tortellini Carbonara

very very nice. my husband isnt a big fan of cream-sauce pasta's, but when i served this his eyes went wide like a little child and he asked if there was any left. only differance, i added a good handful of sliced mushrooms and a clove of minced garlic. yum!

Creamy Macaroni and Cheese

i have JUST made this, had two mouthfuls and had to comment. it is DELICIOUS!!! i'll admit, at first i was very dubious as the evaporated milk STANK, but once the cheese was added it just transformed. i am 3 months pregnant and this has absoloutly indulged my craving for mac & cheese. thanks HEAPS for sharing.

Slow Cooker Beef Stroganoff I

this is a beautiful recipe! i served 4 people using the ingrediants for 4 and it worked fine, but no leftovers - sob! when i first put it together i was dubious as i hate cream of mushroom soup, but as the meat cooks it leeches its juices and it all comes together fantastic. only adjustment i made was to add two generous handfuls of sliced mushrooms and about 1/2 cup of extra water. any leftover sauce is soooo good soaked up with fresh soft bread.

House Fried Rice

this was a good base for making fried rice. i thought it was a little lacking and next time i believe some oyster or fish sauce may make all the differance. i too didnt think 1 egg was enough, and i added mine at the end. the fact that oil wasnt left at the bottom, of my bowl as opposed to store bought fried rice was a big winner for me.
