Todd's Famous Blueberry Pancakes

Very fluffy pancakes, but not a whole lot of flavor. Could use more sugar and/or vanilla. I prefer buttermilk pancakes, but if you don't have buttermilk on hand, these are easy to make. Also, don't mix the blueberries in or it will turn your cakes green like some have complained about. After pouring mix on griddle, place blueberries on top - use more berries than recipe calls for!

Mike's Taco Dip

My family liked this dip. My husband would have preferred there to be meat in it, but I really liked it as is. I used mild salsa so that my young children could eat it, but I really didn't need to. The cream cheese & sour cream really mellowed out the salsa and you couldn't even really taste it. Next time I will use medium or even hot salsa and I'm sure it will be fine for the young ones. This is not a "walk by and dip" kind of dip. If you're wanting something that folks can grab a chip, dip it and move on, this is not the dip - it's too thick. It's best when scooped out onto your plate. Very yummy - thanks for the recipe!

Peanut Butter Fruit Dip

My kids loved this and I felt good about it being healthy. I used low-fat peanut butter and light whipped topping and it turned out great. Ate the leftovers 2 days later and it was still good!

Candied Kielbasa

I really like these! Many of these types of recipes are too rich or too sweet. This one was perfect. I liked the horseradish - gave it a nice twist. Leftovers were great!

Banana Crumb Muffins

These were really good muffins! Followed others suggestions - add 1 tsp vanilla, 1/2 tsp nutmeg, 3/4 tsp cinnamon, and substituted oil for butter. I also tried anothers suggestion about adding crumb topping during last 5 minutes of baking, but next time I will stick to the recipes directions and put it on before baking. The brown sugar is yummy when melted and crunchy on top of the muffins. Thank you for the recipe, Lisa!

Country Apple Dumplings

These smelled so good when they came out of the oven! I was hoping they would taste just like they smelled. They tasted BETTER! I was afraid my dough-phobic husband wouldn't like them. Unlike me, he doesn't like anything doughy and with all the liquid, I was afraid he may not like these. My husband thinks this is the best dessert I've ever made! Yippee! I found a gold mine! And it was so easy...

Artichoke Chicken

Wonderful! Husband thought it was good, but rich. I didn't - I thought it was perfect! I wanted a 2nd serving so badly, but decided to save it for the next days lunch. Cut the chicken up in cubes, tossed with remaining sauce/juices and places over plain noodles. Yum! I made this as written, except with Light Mayo - worked just fine!

Juicy Steak

I have cooked frozen steaks on the BBQ many times using very similar seasonings with great success, but I have never tried them in the oven. I was very dissappointed - it tasted like it was cooked... well, in the oven! Not good at all - not even close to the flavor of steaks cooked on a BBQ. Pan fried would even taste better than this method. Sorry...

Creamy Rice Pudding

This is the best rice pudding I've ever made! And so easy! Great flavor and texture - so creamy! I adapted to what I had on hand - jasmine rice, non-fat milk and no raisins. It was wonderful! As it states, it should be served warm. After it cools, it starts to thicken and lose its creaminess, but it still tastes great. I will make this many times more! Thank you, Erica!!

Caramelized Baked Chicken

My family liked this dish! Tastes like a good teriyaki sauce and it's very easy to make. Although, pouring a bottle of your favorite teriyaki sauce over the chicken would be easier with the same results. I made this with chicken legs and turned them every 15 minutes while baking. Like many others have said, the sauce stayed thin. I think the thickness of the sauce depends on the quantity of water in each brand of soy sauce. The sauce tasted great on the rice I served on the side.

Honey Baked Chicken II

I really liked this dish. I'm not sure what I like more - the wonderful taste or how easy it was to make! I used chicken legs and didn't think it was greasy like some other reviewers. As soon as it was done, I took the chicken out of the pan and onto a serving dish. If you leave the chicken in the pan, it will become greasy. I added a little bit of the pan drippings to my rice and that was delicious! My husband does not like mustard or curry powder in his dishes, so I didn't say a word about this having BOTH! He could not tell and liked the chicken.

Omelet in a Bag

These were so much fun to make! I made omelets for everyone in my family and they were ready all at the same time! Brilliant idea! My picky husband prefers the flavor of a traditional pan fried omelet, but he thought these were good. These would be so good wrapped in a tortilla because they are already perfectly shaped for a breakfast burrito!

Quick and Easy Alfredo Sauce

My family wasn't crazy about this one. They didn't like the flavor of the parmesan, so that could have been the problem. I bought the refrigerated plastic containter of grated cheese you find next to the gourmet cheeses. I would have probably had better results by grating a higher quality (and expensive) brick of cheese myself and it would have melted better, also.

Chili Rellenos Casserole

I didn't have time to read through the suggestions and I made this as written and thought it was wonderful! It turned out thinner that what I was expecting, but it tasted wonderful! When I go to a Mexican restaraunt, I always order Chili Rellenos - they are my favorite - and this casserole tastes just like them! This will be very easy to make when I'm craving Chili Rellenos! I can't wait to try out everyone's suggestions next time!
