These are great! I decreased the amount of butter in half, but kept everything the same. Start checking the cookies around 7 min, once they get light golden brown on the bottom pull 'em!

Vegan Chocolate Cake

Fantastic cake! I didn't tell anyone that it was vegan so they wouldn't prejudge the cake. They loved it and were shocked to know it was vegan! Simple recipe to make, relatively cheap ingredients...this one is a keeper. I used a 1/2 cup of cocoa instead of the listed 1/4 cup and baked it in a 9" circle cake pan that I lined with parchment paper and dusted with flour. It took about 35 minutes to fully cook. For a vegan 'buttercream' frosting I mixed together 1/4 cup softened margerine, 1/2 tsp vanilla, 1 1/2 cups powdered sugar, and about half a tablespoon soymilk or enough to make the consistensy spreadable. Great recipe. Naan tends to get tough and stale pretty quickly after making it because there is no fat in it, so if you want it to stay soft a little longer after making it add a little bit of butter or oil.

Wow...fantastic! I even cut down on the amount of butter in the recipe and used half whole wheat flour and they still turned out light and airy and melt in your mouth good. This recipe is a keeper!

Fantastic, can't mess this one up! Very moist dense apple bread with a crispy crust. I followed the recipe exactly except i used half whole wheat flour. This one is a keeper:)

Amusement Park Cornbread

A great simple classic perfect for serving with stews or as dessert w/a dab of honey on top. Like many others I reduced the amount of flour and upped the corn meal. I also used whole wheat flour. This one is a keeper:)

Fast and Delicious Black Bean Soup

Pretty good and easy to make! I skipped out on the ham and used vegetable broth. Great hearty soup and goes well with bread with melted cheese on top. mmmm:)

Best Brownies

I must admit, when I read the reviews that said replacing the 1/2 cup of butter with applesauce will still make an awesome brownie, I was really skeptical. Really skeptical. But I tried it and hey it tastes great!!! I don't miss the butter at all, these brownies are still moist and yummy and you can't taste the applesauce. (Also replace the white flour with whole wheat and I dare you to taste the difference!) Just make sure to check them out in the oven after 20 minutes, less time if you want fudgier undone brownies, a little longer if you want more cake like brownies. This recipe is a keeper!

Chocolate Chocolate Chip Cookies I

Whoa these are good! Definate keepers! I only changed a couple of things: I used only half the butter called for and I also used 1 cup whole wheat flour. You can't taste the difference and they end up being a lot less greasy! These cookies aren't cakey at all, they are very moist and fudgey...as long as you don't overbake them!

Grandpa Hubbard's Oatmeal

Great oatmeal, i don't know why i never tried to make oatmeal by scratch before...i've always relied on the instant kind which doesn't give half of the flavor and texture of this stuff. If you're looking for a quicker and less messy way to cook the oats, put the oats and water in the microwave for 5 min at medium heat, and then finish them off w/the butter etc. I can't wait to make it again!

Addictive Sweet Potato Burritos

MMMMMM!!! I'm eating one right now and I am so tempted to heat up another one. I simplified the recipe a bit and used a burrito seasoning packet to season the mix instead of the mustard etc. I also used a mix of half and half black beans and kidney beans and took the suggestions of previous reviewers and mashed the beans before adding them to the pan. The delicious sweet potatoes add a great dimension to the burrito! I used whole wheat high protein tortillas and kept the skins on the sweet potatoes to make them a bit healthier. This recipe is a definate winner.

Egg Scramble

YUMMY! I made enough veggies to refrigerate half so i could make this again later in the week. Quick and easy meal for a hungry vegetarian. I used red onion and red-skinned potatoes(with skins on) to make it a little healthier. But I skipped out on the hot spices. Still turned out great esp with the saltiness from the fresh cheddar. I can't wait to make this again!
