About this Cook
I'm a PA girl - I'm a Human Resources benefit specialist and work for the world's largest life ins. company. My favorite place to be is PSU for tailgating and a great game. I'm single, just bought my first home, which I enjoy renovating. I own a beautiful Bombay cat named Nero. I love to cook, try new recipes and feed the people I love.
My favorite things to cook
Probably my favorite genre is Italian, but I enjoy cooking just about anything. I enjoy a challenge and often get bored when people request the same thing over and over. I enjoy inviting people over just to try new things.
My favorite family cooking traditions
My grandmother made the most incredible fudge - however, she never wrote down the recipe before she died. No one has yet to duplicate it. Also, a big family favorite is her baked mac and cheese. I created roasted potatoes on the grill and also rosemary chicken. These are very popular - with herbs from my own garden!
My cooking triumphs
My biggest triumph was teaching myself how to cook and then experimenting enough to become a chef!
My cooking tragedies
The only tragedy I can think of is using - this happened only once - baking powder instead of baking soda!

Baked Teriyaki Chicken
This recipe was so easy and yet it turned out to be better than restaurant quality! I'm so pleased. Used boneless, skinless chicken breasts. Doubled the sauce, as everyone else mentioned. Used 1/4 c. white sugar and 1/2 c. brown sugar. Lined dish with foil and cooking spray. Put 1/2 of sauce on to the chicken, covered with foil, and cooked at 375 for 30 minutes. Took out of oven, turned pieces over, drained some of the extra liquid, and added rest of sauce. Baked, uncovered, at 350 for 20 minutes. Chicken was so moist and tender, it was falling apart! Will definitely make again!

Garlic Chicken Fried Brown Rice
Wonderful side dish! I made a couple changes but it turned out excellent. I cooked teriyaki chicken separately and had this on the side. Used white rice and substituted french cut green beans instead of peas. Also added a couple drops of sesame oil. This will be in the "go to" recipes!
