Thai Peanut Noodle Stir-Fry

This was delicious! The only change I would make is to use a little less sweetener (honey or brown sugar) as I found it to be a little too sweet for my taste. Next time I will probably add some chicken.

Honey and Rosemary Sweet Potatoes

I really liked these, but my husband said "too sweet". Taking the potatoes out of the mixing bowl with the slotted spoon and allowing the sauce to drain is important in order to avoid burning. I forgot and just dumped the mixture onto the pan. Where there was extra sauce it started to burn so I had to take them out early, but they were still delicious.

Garlic Shrimp Linguine

Easy Indian Butter Chicken

This was delicious, although I wouldn't say it was all that easy. Maybe it's easy compared to other ways of making Butter Chicken. I had a hard time finding the Tandoori Masala. I was able to find the Garam Masala in the spice section of my grocery store. I didn't really want to spend too much time looking for the other spice so I ended up ordering it online from The Spice Sage which would be a good alternative for those living in more rural areas. You'll want to try not to have leftovers because it smelled awful the next day! I will definitely make this again!

New Orleans Corn Bisque with Smoked Sausage

This was very good, and easy to make. My husband can't eat potatoes due to a potassium retention issue so I substituted two cups of cooked rice for the potatoes. It was good, but it made it a bit more like a casserole. I fried the sausage a bit before adding it to the soup. Next time I think I would cook it a bit more, but that's just personal preference. I also added some red pepper flakes for a bit more of a kick.

Different Chicken Cordon Bleu

This is delicious but I did have some trouble with the top of the chicken not getting thoroughly cooked, with all the stuff on top of it. So, I put the chicken in to cook for 10-15 minutes while I am preparing the sauce, etc. I have also tried making it into more of a casserole by cutting the chicken and ham into smaller pieces and my husband really likes that too.

Chicken and Dumplings III

This was very easy and delicious! I used chicken breast, but next time might use both breasts and thighs. I also used chicken broth instead of water to boil the chicken. I substituted one cream of chicken soup for the cream of celery and added frozen carrots. I cut each biscuit into four before tossing them in the soup and they cooked nicely.

These were okay. I thought they were too sweet and they didn't spread out like I thought they would. The dough was a bit dry, but I just used a scoop and it worked pretty well.

Tater Tot Casserole

Salsa Chicken Burrito Filling

This was way overpowered by the taco seasoning and chili powder. My husband and I were able to eat it, but would not make it again. If I were willing to try again I would cut back the taco seasoning by at least half. I had also used 3 chicken breast halves and 8 ounces of tomato sauce and the seasoning was still too much. It's been about 14 hours since I ate it and it is still "visiting" me.

Easy Pancakes

These are easy and delicious. Yes, you need to lower the baking powder to 2 tsp, but otherwise I didn't need to make any changes. Much better than Bisquick pancakes or out of the box mixes. Also, very easy to make with ingredients you would have around the kitchen. Not quite as good as restaurant pancakes, but I imagine I would need buttermilk or some other non-staple to make those.

Pastitsio II

After all of the rave reviews I was expecting something awesome. I was a little disappointed that after all of the hard work it was a little bit boring. I had never had it before though, so maybe my expectations were out of whack. It was good. It just didn't knock my socks off.

Sour Cream Gooseberry Pie

This was very good, but I, too upped the gooseberries to 2-3 cups. I liked the tart taste, but you may want to add more sugar if you increase the gooseberries.
