Homemade Mac and Cheese
Gourmet Mac n Cheez! Yes, I know that it's not a 'diet food' or a 'health food,' but it is such a staple! Love this recipe. I always relied on the box, and now I'm thinkin' outside the box! I added a scrunched-up 100 calorie pack of Doritos to the topping and MMMMMmmmmmm :) Thanks so much!

Mexican Chocolate Cake
excellent recipe. moist cake. after reading reviews, used 1/2 cup tequilla, 1/2 cup milk, 1/2 cup orange juice as the 'liquid' ingredients along with the butter and vanilla. my only problem is that the cake 'stuck' really bad to both of the 9/9 pans, and they were two different brands. Remedy: lots of icing :)

Sam's Famous Carrot Cake
FanTabuLous. Never made carrot cake before, and this was a snap. Plus, it was delish. The girls at work really went for it, not a piece was left to bring home :( I think the buttermilk really made it moist. Used half white, half wheat, like one of the reviewers suggested, and sub'd the oil for applesauce. I also used Apple pie spice in place of the cinnamon for that extra "Me" touch. Thanks so much Sam :) Dis cake is da bomb, even when I used storebought cream cheese icing for a topping :)
