Balsamic Roasted Pork Loin

Delicious! My son, who dislikes pork, told me he would eat pork as long as I prepared it in this way! For those who thought the balsamic over-powered the meat must not be fans of balsamic vinegar. This is what made the dish "restaurant quality," to quote my husband. I took the advice of one reviewer and patted the roast with about 1/2 cup seasoned (onion & garlic power and dried rosemary & thyme) flour. I also added 4 cloves minced garlic and 1/2 C white wine to marinade. Thanks for a terrific recipe, Melissa!

Fusion Chicken

This was delicious! My son and husband loved it. The chiklen was moist and full of flavor. Using the red wine vinegar and fresh cilantro is crucial to this dish. I used lots of red salsa making sure the chicken was covered. It helped with the presentation.

Baked Teriyaki Chicken

Another winner! This recipe was quick and made the house smell incredible. I substituted lemon juice for the vinegar and added more garlic and fresh ginger. I, too, doubled the sauce.

Scallops with White Wine Sauce I

The sauce is superb. I used 1/2 fresh lemon juice with just a touch of vinegar, added minced garlic and 1/2 C chicken broth and only 2 T butter. I think the key here is to let the sauce simmer for about 20 minutes to allow the flavors in the sauce to blend. My husband and nephew were fighting for the scallop. The sauce was also excellent over the brown rice I served. Thanks for another keeper!

Pork Tenderloin with Creamy Herb Sauce

Delicious with these changes: sauteed pork in olive oil, grated carrots added 4 cloves of garlic and 1/2 onion chopped, and replaced beef granules with chicken stock.

Sauteed Garlic Asparagus

The asparagus was so delicious that both my daughter and nephew could not stop eating it. Will make it again and again. (Be sure to check after 10 minutes. The second time I made this I left the asparagus in the covered pan too long and it almost burned.)

Bourbon Pecan Chicken

This dish was fantastic. I took the time to clarify the butter. It was easy and did not burn when I sauteed the chicken. I did as other reviewers and doubled the crumb misture and sauce. I passed the chicken through an egg-milk wash before pressing crumbs, then I put crumb coated chicken in frig for about an 1 hour. The crumbs never fell off. I reduced mustard in sauce to 2 T. only because hubby does not like mustard taste. My husband and brother-in-law couldn't stop eating it. This is definately a keeper.

Roasted Pork Loin

This was delicious. We were out of white wine so I used beef stock instead. Also added fresh mushrooms and sliced vidalia onion. Put roast on high rack and roasted potatoe wedges. Delicious!!!!!!!!

What a fantastic dish! It looked and tasted like an entree from an expensive restaurant. I added lots of mushrooms, yum. My husband and kids loved this dish.

These ribs were absolutely delicious. I doubled the recipe and I have enough sauce leftover to feed an army. Okay though because I'll make them again soon. Also, I'll use some of the leftover sauce for chicken.

Marinated Barbequed Vegetables

This recipe was excellent. I added asparagus to the veggies. I marinated overnight which produced a much stronger lemon flavor, Yum. I also added salt and pepper and extra garlic to the marinade. My husband loved this recipe and it made for a quite colorful presentation. If you marinate overnight, you might not want to add the eggplant until the next morning as it overabsorbs the marinade and may be too strong in flavor for some.

Beef Tenderloin With Roasted Shallots

FANTASTIC! I joined allrecipes.com just so I could review this recipe. I made it for Christmas dinner and my husband, son and daughter all thought they were eating in a gourmet restaurant. I roasted the shallots and did the reduction the day before so the actual meal prep on Christmas Day was not too long. The sauce is so incredibly tasty you'll want to drink it! I served the dish with the marinated barbeque vegetables and the garlic mashed red potatoes (both recipes from this site). Everything was absolutely delicious and the presentations made for a very colorful table.
