Spaghetti Pie II

Reviewed: Dec. 31, 2005
For taste, I would give this recipe 4-stars. However, the ease and time involved in making the recipe bumps it up to 5-stars. I replaced the ground beef with italian sausage. I also replaced the onion, pepper, tomatoes, tomato paste, sugar and oregano with a jar of Ragu. This is a recipe that will be used in our house on busy school nights.

Make Ahead French Toast

Reviewed: Dec. 31, 2005
There wasn't anything that really made this recipe stand out above the rest as far as french toast recipes. I replaced the pecans with chocolate chips for the kids. They weren't thrilled with the results. I won't be using this again.

Cinnamon Snack Mix

Reviewed: May 22, 2006
I think this recipe would have still received 5-stars from me even if I hadn't tinkered with it. However, I did make changes since it was for a school party. Like others, I substituted cheerios for the ramen noodles. I substituted 1 1/2 cups mini marshmallows (added AFTER baking) for the almonds. I also added 1/2 teaspoon of cinnamon. I too thought that since it was in the name it should be in the recipe. Since others were reporting that it was getting too brown in the oven, I turned my oven temperature WAY down to 250 degrees. I left the mix in for 45 minutes, stirring at 15 min. intervals, until most of the moisture had been absorbed so it wouldn't come out soggy. It was a hit with the kids. I will definitely be using this again. Thanks!

Down Home Baked Beans

Reviewed: May 22, 2006
I used my kitchen shears to cut up the pound of bacon to crumble-sized pieces before cooking to save time and skip the flipping of pieces process. No microwave bacon for me please. I used Bush's Original Baked Beans. I cut the brown sugar quantity to 1 cup instead of 2. After that, I still found it too sweet and the chili sauce overwhelming the recipe. So, I added 1/4 cup prepared yellow mustard. That helped even it out. My husband really liked the bacon flavor. Unfortunately, the kids didn't care for it. Although, it could have been the texture and not the taste for them. This is a nice large recipe for social events.

Chocolate Chip Muffins

Reviewed: Mar. 3, 2007
I made the following changes based on other reviews: 1 c. sugar, 1 c. milk and 1 c. chips. The muffins were done at 15 minutes using a standard muffin pan. The batch made 18 muffins. The taste was only average for the amount of effort/changes involved. Next time I'll use a box of Duncan Hines or Betty Crocker Choc. Chip Muffins for the same taste and less work. Thanks anyway.

Crazy Cake

Reviewed: Mar. 3, 2007
The only change I made to this recipe was adding 1/2 c. chocolate chips to the batter before baking. I mixed the batter in a bowl and greased/floured two 9" pans prior to pouring the batter in. I think they baked for about 20 minutes. Make sure you heavily grease and flour the pans as the cake is stubborn coming out. I agree that it tastes better the next day. Thanks!

Italian Confetti Pasta Salad

Reviewed: Oct. 15, 2007
I made this recipe twice. The first time I followed the recipe. The second time, I made changes recommended by other reviewers. Both times, there was little flavor, other than mayo. The salad absorbed the dressing rapidly (by the following day). Sorry, but I won't be making this again.

Dip For The Stars

Reviewed: Oct. 22, 2007
I used my large mixer with a wire beater instead of my tiny processor. This recipe makes a large amount that my processor cannot accomodate. Came out wonderfully. Next time I'll double the amount of tomatoes and nuts and increase the pesto to 1 c. since there is so much cheese mixture. Let it come to room temperature before eating, otherwise it will be crumbly. This is a wonderful recipe for entertaining.

Buffalo Chicken Dip

Reviewed: Jan. 14, 2008
I found the cream cheese and pepper sauce too dominating in this recipe. The other flavors were lost. I didn't think it tasted anything like chicken wings. My only advice, if you are planning on preparing this, is to eat it with celery. It's a nice change from crackers. I won't be making this again. Sorry.

No Bake Cookies III

Reviewed: Jan. 14, 2008
I bumped up the cocoa to 4 Tablespoons, used butter instead of margarine and omitted the salt since it was already in the butter. These are an easy and fast cookie to make with staples one usually has on had. It came in handy for our egg-allergic family member.

Bing Cherry Gelatin Mold

Reviewed: Mar. 25, 2008
I couldn't taste the Coke that was used in making this salad. It tasted like it does when using water instead of Coke. Next time I'll use water in the recipe and drink the Coke. I omitted the nuts.

Hot Fudge Ice Cream Bar Dessert

Reviewed: May 3, 2008
I switched out the choc. syrup for hot fudge. I mixed the hot fudge with the peanut butter without needing to heat anything. That way I didn't have to wait for any cooling before assembling the dessert. My pan had enough room for 24 ice cream sandwiches. DEFINITELY spread the chocolate mixture on before the Cool Whip. I added some caramel on top of the Cool Whip which made for a nice presentation. Since this was being served to a party with kids, I feared they wouldn't eat it with nuts. So, I used 8 crumbled Reese's cups in place of the peanuts. Next time I'll use more Reese's cups because everyone wanted a piece of the dessert with lots of the cups on it. When beginning the second layer, make sure you push down on the ice cream sandwiches to eliminate any air pockets in the dessert and to give yourself more room in the pan. I used a 9x13 cake pan, which is deeper than my 9x13 Pyrex dish, and the dessert filled it to the top. This is a super easy recipe. It's easy enough for beginning cooks and kids to make. The options for different tastes are plentiful. Well done!

Artichoke Tossed Salad

Reviewed: Aug. 12, 2008
I only used 1 head of lettuce. I doubled the amount of artichoke. I found the dressing strong in the onion flavor. Even after doubled the artichoke, I still thought it was lost within the salad, barely tasting it at all. Probably won't be making this again.

Grilled Salmon I

Reviewed: Aug. 22, 2008
I used a T. of lemon juice instead of lemon pepper. I didn't think this recipe needed any extra salt due to the soy sauce, so I didn't add it. We thoroughly enjoyed this easy and tasty recipe.

Frosted Chocolate Cookies

Baked these cookies following the recipe. I did not frost them. Found them too cake-like with a tangy/sour aftertaste. Sorry, I won't be making again.

Dried Beef Cheese Ball

Reviewed: Jan. 1, 2009
I didn't use the MSG. Even after rinsing all the beef, I still found this too salty. I recommend using onion powder not onion salt.

Fluffy Scrambled Eggs

Reviewed: Jan. 4, 2010
Followed the recipe exactly. The eggs came out very fluffy; indeed quite bouncy. However, I agree with other reviews that the addition of the evap. milk detracted from the egg taste. Since it didn't improve the taste, I'll save my money and not include the evap. milk next time I prepare scrambled eggs. Thanks anyway.

Chocolate Mint Cookies I

Reviewed: Jan. 4, 2010
Yes, these cookies are flat. It's the nature of the recipe. If you don't want flat cookies, don't make these. Personally, I don't care what a cookie looks like. I find it more important that it tastes good. If you want a delicious cookie regardless of whether or not it's flat; try these. I followed the recipe exactly using Andes mints. They were chewy and yummy not crispy at all like some reviewers' results. Everyone in the house enjoyed them. I'll be adding them to my Christmas staples. Thanks a bunch!

Ultimate Frozen Strawberry Margarita

Reviewed: May 10, 2010
There wasn't anything remarkable about this margarita recipe. I needed to double the amount of strawberries in order to draw out some strawberry taste. I don't think I will use again. Thanks anyway.
