Harvest Pumpkin Tarts

Bland and found the baking time off as the bottom of the crusts were gummy. Not worth the effort to try and tweak for improvement. Thanks anyway.

Southern Grits Casserole

I'm giving this 4 stars because of the changes I made. But, with those changes, the opinion here is that it is 5-star dish. I used 8 eggs instead of 12. I added 2 Tablespoons of Worcestershire sauce and 1 teaspoon of garlic powder. I assembled the casserole, except for the last 1 cup of cheese, and then froze it. When it came time to serve it, I pulled it out of the freezer early in the morning and heated it in a 325 degree oven until warmed through. I put the final cup of cheese on top and put back in the oven for a few minutes until the cheese was melted. It's a definite keeper!

Loved this recipe. I used Andouille sausage. One could probably add another cup of rice to make this less "liquidy." Adjust the Cajun seasoning to your personal taste.

Grandma Snyder's Oatmeal Cake

Outstanding cake that came out beautifully. I used old fashioned oats, which I think makes a difference. I used pecans instead of walnuts, and may cut back (1/2 - 1 cup) on them next time I make this (there WILL be a next time). Thanks!

Cherry Pie III

I used refrigerated pie crusts. I changed the 10 teaspoons cornstarch to 3 Tablespoons. The recipe calls for 2 cups cherries. I just used 2 cans, drained, cherries. Easy recipe to keep on hand. Thanks.

Taco Salad I

I used Catalina dressing in lieu of French dressing. I used black beans instead of chili beans. I also added a can of corn, drained, to the mixture. Recipe is a keeper as the whole family enjoyed. Thanks.

Dill Dip III

This recipe makes a very large amount. I prepared it as written. I felt it was a little heavy on the mayo taste and quite salty. I would decrease the salt, especially if serving with chips. I also found the onion flavor to overwhelm the dill flavor.

Sesame Noodles

I substituted olive oil for the safflower oil. I changed the 1 teaspoon sesame seeds to 2 Tablespoons. Easy recipe that is good alone but would also be tasty with shrimp or chicken for a one-dish meal.

Angel Food Cake II

I changed 3/4 cup of confectioner's sugar to 1 cup of confectioner's sugar. I also added 2 cups mini chocolate chips to the batter just prior to pouring it into the pan. The cake turned out well. I chose not to frost it but dusted it with sifted confectioner's sugar instead.

Simple, Classic Chicken Potpie

I used 2 (15 oz.) packages of pie crusts so the potpies would have a bottom and top crust. I altered the 9 Tablespoons flour to 1/2 cup flour. I also added 8 oz. of fresh sliced mushrooms. Aside from those minor adaptations, I prepared the recipe as written. Turned out yummy. Thanks.

Chocolate Covered Strawberries

Forget the double boiler. Put the chocolate/shortening in the microwave. Zap it for 30 seconds. Stir. Zap it for 30 more seconds. Done. Dip your berries. This recipe covered 30 healthy-sized berries for me. Enjoy! A good rule of thumb to remember is 1 Tablespoon of shortening for every 1 Cup of chocolate chips. I used semi-sweet chips. I decorated the berries with 1/3 Cup melted white chips. I put the melted chips in a ziploc bag, poked a hole in one of the corners and squeezed the chocolate onto the berries. Mmmmm!

Frosty Pineapple Salad

I found the whipped topping flavor overpowering in this recipe. Family members didn't care for the texture of the crushed pineapple within the salad. Won't use again. Sorry.

Caramelized Onions

Yummy! The only substitution I used was honey in place of molasses. I prepared these for grilled burgers. I agree that some of the onion flavor is lost with the other ingredients added. It's not bad, just different. I won't use this on burgers again because I like the onion flavor to dominate in caramelized onions. I will, however, add this to baked beans in the future. Thanks!
