Jalapeno Popper Spread

I made this for a party and no one really cared for it. Most of it didn't get eaten. The mayonnaise was overpowering for us. I decided to try again with some modifications. I used fresh jalapeno's. I added some cumin to the cream cheese. I used sour cream and no mayo, mixed in some cheddar cheese, and thinking of some poppers a local restaurant, I added a small can of crab meat, and added breadcrumbs to the top. I served it again to our friends and with the modifications it was a huge hit.

Homemade Black Bean Veggie Burgers

This was definitely a hit. My husband is a meat lover and he really liked these. I followed the recipe and I grilled them on nonstick foil. I had no problems with them sticking together. I served them with sliced tomato and chipotle powder mixed with yogurt cheese to top them. I will make them often.

Playgroup Granola Bars

My husband requests that I have these on hand all of the time. I have made a few changes. I use quinoa flour instead. I use 3/4 cup of applesauce and 2 tablespoons of canola oil. I add 1/2 cup raisins, 1/2 cup dried blueberries, and 1/4 cup dried strawberries. I also add 1/4 cup of chopped walnuts. They stay very moist. My husband likes to have them at work, and we take them on our bikes rides for a healthy snack. The quinoa flour adds protein and the added fruit make them very nutritious. I have also made them with peanut butter, bananas, and chocolate chips for friends, but the fruit is my husbands favorite.

Chicken Puffs

I have been making this for years. I add a diced red pepper and broccoli and I leave the cresent rolls together in a rectangle on a cookie sheet spread the filling down the middle and make a braid. Bake 20 - 25 Min. My family loves this.

Poor Man's Pepper Steak

Good recipe, I made this on the stove top in about 10 minutes instead of putting in the oven. I browned the steaks and sauted the onions and garlic in a little butter then I used 1-1/2 cup beef broth and 1/2 cup of red wine in place of the water to deglaze the pan. I added the peppers at the last just to warm them. Last I sprinkled shredded swiss cheese to the top. I served over some left over rice. I will fix this again for a quick dinner Update. I am no longer eating meat. I made this with Portabellasin stead of the meat and used vegtable broth. Yum.
