My husband requests that I have these on hand all of the time. I have made a few changes. I use quinoa flour instead. I use 3/4 cup of applesauce and 2 tablespoons of canola oil. I add 1/2 cup raisins, 1/2 cup dried blueberries, and 1/4 cup dried strawberries. I also add 1/4 cup of chopped walnuts. They stay very moist. My husband likes to have them at work, and we take them on our bikes rides for a healthy snack. The quinoa flour adds protein and the added fruit make them very nutritious. I have also made them with peanut butter, bananas, and chocolate chips for friends, but the fruit is my husbands favorite.
