Dark Chocolate Cake I

WOW!!! I halved this recipe because I was making a 6 inch round layered cake. For frosting I mixed 1/4 c. softened butter with 1 1/2 - 2 cups powdered sugar, about 1/4 cup Bailey's, and a tiny bit of milk as needed to get the right consistency. POW what a great combination!!!!!!!!!!!!!!!!! Definitely the greatest cake I've ever made, and I've made quite a few :)

Middle Eastern Rice with Black Beans and Chickpeas

Some changes to make this UH-mayzeeing: DOUBLE THE SPICES, except for the Cayennne. This one you should add more of little by little so it doesn't get out of hand. Also, add 1/2 can TOMATO PASTE when cooking the rice, as well as 1/2c RAISINS. I'm vegetarian, so no meat for me. Doesn't need it. I added DICED TOMATOat the end, and servd with homemade YOGURT. Wow. WOW!!!

Tasty Lentil Tacos

WOW! I'm eating some as I type. These tacos are even more delicious than original meat tacos, and so much healthier! I don't mix the salsa in with the lentils, but rather put it on top just because personal preference. I do use more liquid than it calls for, so I just keep some water close by to add as needed. So SO SOOO good!!!!!

Chocolate Mocha Cake I

so impressive! i also used regular coffee instead of instant, and it worked fine. next time, i will use instant coffee with a small amount of boiling water to make a coffee concentrate, and add this as well, or add instant coffee to hot brewed coffee. But, EXCELLENT texture and flavor, came out of pans clean and decorated well. Only one problem, didn't even last one whole day...

Coffee Icing

even better than regular coffee, dump about 5 servings worth of instant coffee in with 1-2 tbs of boiling water to make a coffee concentrate paste, then add milk as needed for texture. gives it that extra kick!

Crazy Cake

wow! Why do we ever use any other chocolate cake recipe when this one is so simple and so delicious? I did dump in a handfull of chocolate chips, which made for a nice little surprise. This is truly incredible.

great base recipe. here's the changes i made: **replace all flour with whole wheat flour ** reduce sugar by 1/4 cup** replace corn with frozen or fresh blueberries ** YUMMM!!!

Zucchini Patties

YUM!!! I'm eating these as I type and they are fabulous. As other reviewers suggested, I added some more flavor. I replaced half of the flour with seasoned breadcrumbs, plus 1 tbs minced garlic, 1 tbs rosemary, and 1/2 tsp fresh grated pepper. Serve it up with warm marinara sauce and you're in heaven.

Sugar Cookie Frosting

this is the best simply icing recipe I have found. it stays maleable long enough to use throughout the day -- I put it in ziploc baggies with the corner cut off and used it all day in a variety of colors. yummm!!! would be tasty with almond extract too...

truly phenomenal recipe... first one i have found that clumps up, making it perfect for nibbling. Add whatever fruits or nuts you want, it's the oil/sugar/honey/water ratio that's great

Marrakesh Vegetable Curry

woah. this is delicious. i doubled the spices, as per suggested, and i would add that it might be wise to NOT double the cayenne when doubling everything else. It's definitely edible with doubel cayenne, just have some water close by. Also, I love the little bursts of sweet from the raisins, so I will add more next time. Overall AMAZING dish. YUMMM!!

Chocolate Chocolate Chip Cookies I

WOW this is a great cookie. As with any recipe, I made some changes based on personal preference and on what I had in the cupboard. I didn't have cocoa powder, so instead I replaced 1/2 cup sugar with a packet of chocolate pudding mix, and used 2 2/3 c flour to make up for the lack of cocoa. Secondly, I always freeze my cookie dough before baking to give me thick, moist, chewy cookies. With these two changes my cookies came about absolutely AMAZING, and they stay that way for longer. What a great recipe to use as a base. My next experiment: pistachio chocolate chip cookies using pistachio pudding mix. yumm!!

Rhubarb and Strawberry Pie

WOW!!! This pie was absolutely amazing.. first time I had ever eaten or made a rhubarb pie of any kind. Changes I made: used half brown sugar and half white, because that's all I had. Refrigerated filling for longer, because I had to wait on the oven. Replace 1 cup strawberries with 1 cup blueberries, because I had them and it sounded good. Great flavor, great amount of sweetness without being overwhelming, and mine was not runny at all. I think refrigerating it makes a world of difference.

Red Cabbage and Apples

WOW this is an amazing recipe. So simple but delicious -- and what fun colors! The cabbage turns the apples hot pink. A great recipe to 'eyeball' with too -- a bit more of this, a bit less of that... Have fun with it!

Best Ever Banana Bread

hmmm, this bread is yummy but SO sweet! the only changes I made were to use yogurt instead of buttermilk and whole wheat instead of all purpose flour, and 1 c. sugar instead of 1 1/2 c., but STILL it was a little too sweet for me. i will keep looking for a better banana bread recipe.

Banana Oat Muffins

YUMM!!! I made these extra healthy to meet the dietary needs of a friend. Replaced oil with equal amount of unsweetened apple sauce. Used 1 c. whole wheat flour and 1/2 c. white flour, and replaced honey with about 1/4 c. honey. I also added about 1/3 c. golden raisins These were not very sweet muffins (obviously) but were delicious, and VERY healthy!

Simple Whole Wheat Bread

WOW! amazing bread. the texture is like none other I have ever made. the only changes I made were to add some sesame seeds, poppy seeds, and sunflower seeds. will definitely make again!
