Downeast Maine Pumpkin Bread
Lovely. Since I never make a recipe as written(I have a reputation to live up to) - here is a variation. I made the batter into muffins., I did not have pumpkin, but did have an errant butternut squash to deal with. I microwaved it and measured out two cups. I reduced sugar to 2 & 3/4 cups and added 1 tbsp blackstrap molasses, doubled the cinnamon, added 1/4 tsp allspice, 1/2 tsp vanilla and 1 cup pecans. Yum, the texture is really nice and so is the crust. I think the sugar could be reduced further and it wouls still be just as good.

The Best Bean and Ham Soup
The dijon and worchestershre are brilliant. Mine is not even done cooking and the broth is wonderful. I only used on kind of bean though, great northern, all I had on hand. I halved the recipe and it still made a good sized pot.

Quick Hoppin' John Soup
Nice and tasty for the amount of effort involved. I used some homemade wild hog sage sausage, and used 1 can of hot rotel tomatoes and peppers instead of 2 cans of tomatoes. Good wintertime meal. Really wish I had made some cornbread......
