I liked this recipe, but I don't know that it was fantastic. After reading other's reviews, I got nervous about making it too salty. I only added a little salt and that was not enough- at all. I will try this recipe again, but use the amount of salt originally called for. I did double the amount of flour, but not the seasoning because I was making over 30 fillets of various sizes. I used fresh red and white snapper that my husband caught on vacation in Florida. I also refrigerated the batter like suggested in other reviews. I also did not add the whole 24 oz. of beer (remember I doubled). I had just enough batter for 35 various sized fillets.
