Texas Sheet Cake V

Reviewed: Apr. 3, 2011
Made this using about 2 cups of powdered sugar in the icing (because it was all I had) and it was EXCELLENT!!! It was so easy to make, perfect for when you are doing a big party because it's quick to make and you can do it well ahead of time. Next time I will try it with the coffee in place of the water.

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

Reviewed: Mar. 20, 2011
I can only speak for the sauce. It is perfect on shrimp tacos, especially with the "chipotle shrimp tacos" recipe on this website!

Chipotle Shrimp Tacos

Reviewed: Mar. 20, 2011
These are delicious! I did not have the chipotle peppers, and I made the sauce from the "Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini" recipe to serve with it along with some chopped cherry tomatoes and avocado. They were a HUGE hit. My husband said they were my best ever. Not bad for stumbling on this recipe while searching for something to do with my leftover cooked shrimp. (Btw, I cooked my shrimp by boiling them for just a few minutes. When they were done, I added a little bit of lemon juice.) Fortunately the shrimp didn't become overcooked when I added them to the bacon, but I was careful not to leave them on the heat for too long. Make 'em - they're great!

Blueberry Banana Bread

Reviewed: Apr. 4, 2008
I made one large loaf, cooked it at 350 for 35 minutes and then decreased the temp to 325 for another 15 minutes. It turned out great! The perfect solution to my past-ripe bananas and frozen blueberries (thawed).

Ham Bone Soup

Reviewed: Jan. 2, 2006
This recipe is a great starting point and the perfect "leftovers" soup! We made quite a few modifications from the original recipe (mostly due to what ingredients we had on hand). We used the ham bone from Christmas, added some carrots, only 3 little red potatoes (that was all we had left after the holiday!), celery, green onions, 1 shallot, a cup of Uncle Bens, some garlic, black pepper, and green beans. We didn't have any diced tomatoes or kidney beans in the pantry so we left those ingredients out. We also used canned chicken broth (5 regular sized cans because the rice soaked up some liquid to cook). The rice really added some "meat" to the soup. Just like most other reviews said, don't add any salt - there is plenty!
