White Cheese Chicken Lasagna

I am not big on posting all the switches I made to the recipe..but this was excellent! I like a little spice in my lazagna and hot italian sausage goes very well with spinach..so, I added 1 cup of hot italian sausage ground and 1 cups of chicken. My kiddos do not like ricotta cheese, so I made the filling with 2 eggs, 1-8oz box of cream cheese and 1 cups of shedded italian blend cheeses and 1/4 cup parmesean. DELICIOUS!

Pumpkin Yeast Bread

I would recommend this to anyone. I did make a few changes and it was DELICIOUS! I changed the yeast to 2-1/2 tsp.. Some had suggested 1 Tbsp. WAY TOO MUCH..Bread rises and sinks. I also added 1/3 packed brown sugar to make it a little sweeter. Lastly, I skipped the nutmeg and ginger and added 1/2 tsp of Pumpkin Pie Spice. BEAUTIFUL BREAD and super delicious! (Adding the honey butter is HEAVENLY)

Cajun Seafood Pasta

This was delicious! I used Whole grain fettucini. I also added a teaspoon of cajun seasoning. Added chopped clams and scallops also. Used a bag of Italian cheese instead of swiss. It was outstanding. Also tossed in 2 large cloves of garlic. WONDERFUL!

Fresh Rhubarb Pie

I will never make another version. This pie turned out BEAUTIFUL! I latticed the top and brushed the crust with egg white and spinkled suger lightly over the top of the pie. SOOO wonderful! Not runny like many pies. Follow directions on original recipe..do not change anything!

Braised Balsamic Chicken

Loved it...my youngest son, age 9 and very thin...at 2 huge chicken breasts. I did use part chicken broth/part balsamic vinegar. I also used a can of undrained stewed tomatoes (chopped) instead of the diced. Gave the sauce a sweet rich flavor. Definitly a keeper!

Double Tomato Bruschetta

Loved this recipe! I did make it a little easier and spiced it up a bit. I used 2 cans of diced tomatoes with green chilies (drained) in substitution for the 6 romas. It was easier than cutting up the tomatoes and added a little heat to the bruschetta. I plan to add a small can of olives next time for another twist!

Super-Delicious Zuppa Toscana

This soup had incredible flavor. I was so impressed. I did like it much better than the Olive Garden verson. I also used part chicken broth and part bouillon. Worked beautifully. I also used frozen chopped spinach because I had no fresh on hand. Had it as leftovers today and is even better than the night before!

Easy Chicken Enchiladas

This was wonderful...loved that it was so easy...came together in 20 minutes. I boiled the chicken in salt water and shredded it. I added my homemade salsa (which has a small kick) and substituted black beans for pinto..I would highly recommend salsa with some heat..otherwise, I would add a shot or two of hot sauce to the filling. Excellent! The entire family loved it!

Debdoozie's Blue Ribbon Chili

Very nice flavor. I added 1 small can of corn drained and used black beans in place of the light kidneys. I also used and entire onion and 1/3 cup of chopped red bell pepper. The entire family loved it.

Oatmeal and Wheat Flour Blueberry Pancakes

These pancakes were a HUGE hit with my husband and three boys...I did change a few things...I cannot imagine olive oil in my blueberry pancakes...I used canola oil instead...also, I subsituted 1% milk in place of soy..and I used fresh blueberries instead of frozen, and I added a large dash of cinnamon to the batter...I will use this again and again..thanks for the great recipe!

Jalapeno Poppers of Champions

These were excellent! I did have to cook them quite a bit longer than suggested. I cooked them for 20 minutes on 400 degrees. I used a 1/2 slice of bacon per jalapeno. My company LOVED them. They commented that they were PERFECT! These are simple but time consuming. Until you clean the inside out and then stuff and wrap them...it takes more time than I thought. You can prepare them ahead of time. I have them done 2 hours before my company came and then I just popped them in the over. One last thing...if you have never worked with jalapenos..make sure you wash your hands thoroughly after you work with the peppers.

Fluffy French Toast

My family really loved this. I make french toast a lot--I didnt tell them it was a new recipe. They said it was the best I ever made! I never use bread to make my french toast. I always use a day old loaf of french bread and slice it up. It makes a HUGE differece. You will love it!

Fiery Fish Tacos with Crunchy Corn Salsa

I really liked this recipe--it was light and refeshing. The reason I am only giving it 3 stars is my husband and family really disliked it. I guess the word "taco" threw them off. I think it would make a wonderful summer meal! Won't make again though because I will be the only one eating!

Best Ever Sausage with Peppers, Onions, and Beer!

This was very good. My family really enjoyed it. I did not have tomatoe paste. I substituted tomatoe sauce. The sauce ended up being a little thin--but we LOVED it!
