Margarita Grilled Shrimp

This shrimp is so good and we will definitely make again. We don't like cilantro and didn't miss it.

London Broil II

I grilled med-high for 8 min on each side. Turned out med to medium rare depending on the thickness. I added 1/2 lemon to marinate because the reviews made me nervous that it would be tough. The steak marinated for 24 hrs and it is tender and very good. This is very flavorful but not strong. Will make again.

Grilled Chicken with Rosemary and Bacon

These are really flavorful. I wouldn't change a thing. My chicken breast were pretty big, so I pounded them so they were thinner and easier to roll. I used three pieces of bacon and 4 toothpicks each.

I took others advice and used 1/2 butter for the oil, less lemon juice and some chardonnay. I used 1.5 tbl of dried parley. Served over Caesar salad and ate leftovers cold. Really delicious.

We thought this was too salty and I used low sodium soy. May make again and use less. Carrots, broccoli and red peppers would all work.

Chicken Scampi II

This recipe is so simple and very flavorful. I had a rotisserie chicken, so I cut up and put in along with a can green beans, peas and served over brown rice. Will make again and won't change a thing.

Watermelon Sangria

I followed the recipe exactly and used a whole round watermelon (seedless). I thought it was very good, but not 5 stars. I then read others reviews and added a little sprite to my glass and a little more triple sec to cut the watermelon and it tastes great. I'm going to experiment adding squeezed orange juice.

Wildfire Sausage Meatballs

These are really good and have a nice spicy kick to them. I used Baby Ray BBQ sauce and I think the sweet may be better with the spicy meatballs. I doubled the recipe and it made about 55 meatballs. I cooked on a wire rack over a cookie sheet, because when I didn't, there was a hard crust on the bottom from the fat. I cooked for 18-20 minutes. They were room temperature when I served and they were still really good. Definitely will make again.

Creole Shrimp

My husband just said "this is one of your bests". I followed someone elses advice and cooked the peppers (yellow and red-we don't like green), onions and garlic in olive oil and butter first, then I added some bacon fat. I added a little red pepper flakes (4 shakes). I doubled the recipe and served it over brown rice. Next time I will add extra shrimp. Happily we have leftovers.

This is really good. I used a jalapeno instead of chili pepper, because store didn't have. Added frozen okra as other suggested and thought it was a nice addition. Will definitely make again.
