Creamiest Rice Pudding

Am I the only one who made this because I opened the wrong gallon of milk first and the other one went way past its expiration date? Really, I love this recipe. Needed a way to not throw away milk and found a gem instead. High altitude, so I decided to follow the recommendation to use 4 eggs. Will boil milk first next time and probably simmer for the full 1 hr 15min - 1 hr 30 min. This is great!

Peach Cobbler I

The things I have had for breakfast! I halved this for the two of us. Used 1/2 whole wheat. Baked in 9x6 glass baking dish, and could have cut the baking time down to 20-25 minutes. Used challah bread (this site) and maybe 1/4 cup turbinado sugar. This is great and will pass it on!

Pumpkin Cake III

High altitude adjustments: 1 2/3 cup sugar, 1 1/2 tsp baking soda, 2 tsp baking powder. Fill pans 1/3 to half full (1 1/2 cups for 6" pans). I made these adjustments and it is still moist. Most delicious cake! Thanks!

Wheat Germ Whole-Wheat Buttermilk Pancakes

I love this recipe because there are so few ingredients. It tastes great and right now it's my favorite pancake recipe. Maybe it's the high altitude, but the baking soda taste was a bit strong so I lowered it to between 1 1/2 - 1 3/4 tsp. perfection!

Big Al's K.C. Bar-B-Q Sauce

This is good. Just like anything in life it is definitely advised to make to taste. I.e I decreased the tomato sauce by 1/2 and for extra spice kept adding a pinch of cayenne pepper until it was hot enough for me. Great recipe.

Lemon Custard Filling

I used this for a custard filling for a tart. I read about the cornstarch from other reviewers, so used a bit less of that. I'm also into turbinado sugar lately, so used that instead of white (just a bit less than called for for white), and also added LEMON ZEST (about 1 1/2 tsp). Yum!

Black Bean Chili

This takes 40 min? I can never tell. I have so much fun making this, and usually, honestly, only do the 10 min part in the middle but then just add the other ingredients bring it to a boil, puree and ... Done! Love this! Cheese and crushed blue chips on the top. Easy, quick, delicious!

Pecan French Toast

this is great! I avoid cooking the nuts as this alters the good fat in them so I just sprinkle them on top at the end. Not as flavorful as roasted nuts but supposedly healthier. Anyway, wonderful! Thanks. Love the orange juice in this one.

Apple Crisp

5 stars for being so easy. It's still cooking, but I added a bit of maple syrup to the cooked apples and a dash of flour for absorption. Because I like to add cholesterol-fighting oatmeal to anything I can (bowls of oatmeal aren't consumed around here too often), I ground rolled quick oats into a flour meal and used that instead of the white flour. Looks yummy! Post-cooking: didn't need the dash of syrup! Taste great!

Easy Vegan Whole Grain Pancakes

Very tasty! I added wheat flax and wheat germ instead of the soy. It only made four though, so I'll have to add more liquid, maybe apple sauce next time. Raspberry sauce and blueberries in the mix made it fruity and nutty, too.

Banana Pumpkin Bread

Delish. Excellent. OK, I read all the comments about the cooking time, so I cut the pumpkin to 1 cup. Used 1 banana. 1/2 cup apple sauce (no oil), 3/4 cup brown sugar (no honey or white sugar) and no raisins but I did use chopped walnuts. This is delicious; who doesn't have an old banana around, and I've had fresh pumpkin in the freezer since last October. Great recipe! Oh, 50 minutes is fine for a 6x9 pan this way, plus 6 muffins (25 min).

Spicy Stuffed Squid

Spinach and Mushroom Quesadillas

Delish. The pat dry part, way important. I've made these twice (on the same day) and got rave reviews. They want to have them for another party. Didn't need oil in the pan; they toasted just from the heat of the pan. Thanks!

Sweet Chili Thai Sauce

This sauce is excellent. We are going to use a bit less sugar next time. Also, we added more cornstarch as it didn't thicken to our liking (we actually doubled the amount!). Thanks for this one!

Crab and Swiss Omelet

I found that the yolk separated from the whites during cooking, so that they started to cook at the bottom of the pan with the whites remaining raw at the top. Oh well, I turned often so it wasn't omelet looking, more like chunky scrambled eggs. But the flavor was delicious; substituted shrimp for the crab and added avocado.
