Wonderful Waffles

Truly wonderful waffles - really liked the fluffy texture. I used lowfat buttermilk and added a t. vanilla and had great results. Despite some reviews saying it was not necessary, I did go through the extra steps of separating the egg yolks and whites.

Amazing Pork Tenderloin in the Slow Cooker

Very tender. It was a little salty but had a good flavor. The gravy made from the juices in the crock pot was geat.

Easy Slow Cooker French Dip

Big hit. I served with melted provolone on toasted buns along with mushrooms and onions. Most of my guests had two sandwiches. Very easy to make. The beef was so tender it sort of fell apart instead of slicing but wasn't a problem. I added a little garlic and will probably try using onion soup mix next to see how it turns out. Will certainly make again. Once again, a testimonial to power of the slow cooker.

Basic Cheesecake

Fantastic! I made this for our Christmas party and it was very popular. I doubled the crust mixture but skipped the walnuts. I also added strawberry glaze for a topping. It is easy to mix up, bakes up very thick and has a nice presentation when topped with a fruit mizture. I had no problems getting this to set up. I did leave it in the oven after it was done baking and there were a couple of small cracks but they covered up nicely with the fruit.

Greek Loaf

Artichoke Chicken

The chicken cooked up very moist. I'm a big fan of artichokes anyway but I thought this one was really good. I also added some fresh, sliced mushrooms along with a little extra Parmesan cheese.

Baked Slow Cooker Chicken

A good way to bake a whole chicken without having to have the oven on for several hours - especially handy if you need to leave and run a few errands. I took the advice of some other reviewers and stuffed the cavity with chopped onions and garlic and rubbed on additional seasonings (Mrs. Dash, garlic salt, onion powder..)

Spicy Grilled Shrimp

Not quite as good as the Thai BBQ Shrimp but still four stars for good taste, simplicity and healthy. Again, I use the pre-cooked, already peeled frozen shrimp for extra ease.

Mom's Squash Casserole

Not mind-blowing but a good, satisfactory side dish and a good way to use up squash from the garden. I lightened it up with egg whites (instead of whole eggs) and reduced fat cheddar cheese. Like other reviews I added some garlic salt and Italian seasoning for extra flavor. I also had to use break crumbs in liue of croutons but that worked out OK as well.

Southwest Squash Casserole

I lightened this up with reduced fat cheese and fat free sour cream. the sour cream probably made it a ilttle watery but overall tasted pretty good and had quite a bite to it (in a good way). Good recipe to use up extra squash from the garden. I would make it again.

Make Ahead Manicotti

Excellent! I've served it for multiple crowds and it always get good reviews. I like it because it can be made ahead of time so the work and the mess is done before your guests show up. It also freezes well but be prepared, as it takes about twice as long to cook when frozen. My tweaks include: using 2 jars of sauce, not quite as much spinach, added mushrooms (canned or fresh), and lighten up with skim ricotta, egg substitute and reduced fat mozarella. In a pinch I've used shells rather than manicotti tubes.

Neat Sloppy Joes

This one is a keeper but I did leave out the celery (personal preference). Easy to put together and can stay in a crock pot on low all afternoon so you have a meal ready for a crowd, even if you've been out all day. Depending on the heat of your crock pot you may need to stir in a bit more tomato soup or tomato sauce before serving.

Thai Spiced Barbecue Shrimp

Good taste, quick and easy. I use pre-cooked, pre-peeled shrimp for even more convenience. The marinade becomes a little diluted from the water in the shrimp but I added a little cornstarch while boiling and it made into a nice, runny paste for brushing on the shrimp while cooking. Will make this one again.
