Mexican-Style Goulash

For those of you who think this is bland, use a can of diced tomatoes with green chilies to bump up the spiciness. Now that makes it Mexican style. : )

Quick and Easy Mexican Chicken

Make it quicker, easier and more spicy by cooking chicken with seasonings on a George Foreman grill and topping with a slice of pepperjack cheese, let melt before adding the salsa.

Chicken Pot Pie Soup

Make this quite often. It's very good, fast and easy to put together. I always bake a refrigerated pie crust at the same time, then break it up and add to the soup just before serving. To me, that should be on the list of ingredients! I've also added fresh mushrooms, black pepper and sometimes thrown in a few bay leaves. Just a good delicious and satisfying soup.

Microwave Oven Peanut Brittle

I love making this as part of my homemade Christmas "food basket" to my in-laws who happen to love peanut brittle. They have commented on how much better this is over the store bought brittle. This recipe is so fast and easy and turns out every time once you get the time down for your particular microwave. I messed up on a few batches before I got it right. If it turns out like taffy, you need to cook longer. I use raw peanuts and microwave for 8 minutes, then 3 minutes. Turns out great!

Chili Dog Casserole II

I've made this twice already. It's a very quick,easy,economical meal to make and very filling. Not the healthiest, but if you like chili cheese dogs you'll love this! Thanks for the recipe.

Peanut Butter Chews

Instead of dropping these for cookies, spread and pat in a pan for bars! Then just spread the melted choc/butterscotch chips on top. Less hassle than dropping them on wax paper. I have been making these for years but my recipe calls for Special K cereal. This is a favorite around our house and gets raves wherever I take them! So yummy and Chewy!

Mumze's Sticky Chicken

The whole family liked this chicken. I made it with chicken thighs and boneless breast pieces as this is what I had on hand. I marinated overnight before transferring to pan and baking. The chicken was so tasty and flavorful. I thickened the leftover pan juices with cornstarch and used to put over rice served with the meal. MY husband really loved it. Will make again using the drummies sometimes!

Grandma's Heart-Stoppin' Green Bean Soup

This reminds me of a dish that my mother used to make only she used fresh green beans from the garden and also added cooked cubed potatoes. When I make it now I play around with the consistency, sometimes making it thicker or thinner. My sisters and I try to make it as good as mom did but fall short, but still yummy!

Bacon Wrapped Smokies

Made these for a family get together on New Year's Day. They were a hit! I made a double batch and they were gone-the only dish there that was completly eaten. Got lots of raves! They were fun to assemble as well as to eat!
