Bean Quesadillas

To me this recipe is a good start. The flavors work well together but some items were a little out of proportion. For instance, 1 cup of cheese (if you're making 6) is way too little. Also, you'll note that many other reviewers were adding other things. That's because on it's own it lacks character. Next time I'm going to add some jalepenos or crushed red pepper. As far as the frying, I don't see why it was necessary. I spritzed the pan with some olive oil before putting the tortilla in the pan and it worked phenomenally well. Nice, golden and crunchy. Forget a quarter cup and just squirt some olive oil into the pan before each quesadilla goes in. Like I said, a very good start and I will make this again with a number of revisions.

Beef Heart Braised in Wine

I'm rating this three stars not because I didn't like it, but rather because I think it has a lot of unfulfilled potential. My only change was to add two cloves of garlic, which I'm glad I did. It just seemed to lack a flavor to really marry with the somewhat strong flavor of the beef (which is not unpleasant, just stronger beefy flavor than I'm used to.) It seemed to require a lot of salt and I'm not sure why. Also, the sauce didn't thicken up as much as I expected it to so it was kind of watery. If I get the opportunity to try this again, I'll add more carrots, more garlic, a splash of worcestershire, lots of salt and probably do the braise in a crock pot instead of on the stove and see how it goes from there. I'll probably also hold back some beef stock to add a thickener to to boost the consistency of the sauce. That said, I recommend trying this recipe as is before making too many changes. You really need to see what flavors will work for your family before just going off of my opinion. Lola, thanks for posting a recipe for an unusual cut!

Excellent! I was a little hesitant about the lemon extract but did it anyway and was pleasantly surprised. It added a fresh little bit of citrus to a perfectly sweet dough. Thanks so much!

Mark's Cabbage and Hamburger Delight

Really enjoyed this! Very easy and delicious. I did sub beef stock for chicken stock, just because it seemed to make more sense. The smoked paprika is key here - I wouldn't make this with regular paprika. I think the folks that ended up with gummy noodles missed the part where it says to add water to make sure the noodles don't get dry. I added about 2/3 of a cup, which may have been a bit too much but it all worked out. Without knowing anything else, my husband tasted it and said, "Yum! It's healthy Hamburger Helper!" I'll definately make this again. Thanks!

Tomato Soup I

Easy and delicious recipe that should encourage anyone to stop buying those nasty condensed soups at the grocery store. A few comments: I found 2 cups of cream to be too much and I only ended up adding about half of that; it was plenty creamy. Also, I did not add the sugar. America is so over-sugared and I didn't miss a thing by leaving it out. It was sweet enough just from the tomatos. And do yourself a favor and use real butter - bugs won't even eat margarine ;) Although not necessary, I did buzz it with my stick blender so it wasn't quite so chunky. Someone else had commented about tempering the cream to avoid it curdling and that was an excellent tip.

Homemade Flour Tortillas

Great recipe. I did end up doubling the lard because 2 T got lost in all that flour. And agreed - they are way better than store bought! A word to the wise: make sure you shake off all the extra flour before tossing them in the skillet or the excess flour will burn. I didn't and I set off the smoke alarm!

Asian Barbequed Steak

This was suprisingly good. I pan fried rather than grilled and it was very tasty, and so easy. I only had about a pound of steak but marinated in the whole marinade recipe - turned out great. Thanks!

Chicken Pot Pie VIII

I followed this recipe very closely and it came out fantastic! Like the others, I noticed that it did make a ton of filling, way more than one crust can fill. No worries though, it won't go to waste. Next time I may add some herbs and garlic, but it really is an exceptional recipe on its own. Also, the crust was very tasty and so easy - do yourself a favor and dont use a cardboard store-bought crust for this. Making your own crust is ridiculously simple.

Twice Baked Sweet Potatoes

I took these to work for our Thanksgiving feast and everyone loved them. I made a big batch and didn't take any home with me! Like other reviewers, I didn't bother with the oil and foil for baking. I used real butter, not margarine. Cut back just a tad on the sugar and vanilla, only because I knew my sweet potatoes were really sweet on their own. Great recipe - people were asking for it!

Baked Sweet Potato Sticks

Good, but really needs salt and pepper added to the oil mix. And carefully watch your cooking time. If your sticks are skinnier they'll burn if you leave them in for the full 40 minutes and the recipe doesn't state exactly how big the sticks should be. I also recommend flipping half way through.

Three Bean Soup

This would have been a 3-star recipe, but it gets 4 just because it was so unbelievably easy and fairly tasty for so little work. I think this would be good sprinkled with cheddar and served with tortilla chips. I had it with some pita bread and it was good. Needed a little salt, but that's easily fixable. Thanks for a good, easy recipe!

Quick Vegetable Curry

I agree with some of the other reviewers who thought the amount of spices was insufficient. I almost doubled everything and still felt that there was something lacking. If I make this again, I'll add cayenne for sure, and maybe even some cinnimon. The coconut milk almost made me want to add something a little sweet. However, I really liked the mix of veggies and beans and I thought they went together well. I'm always looking for new things to do with beans!
