Applesauce

Very good recipe! Next time I'll double the amount of cinnamon and use less water. The cloves make it taste and smell like Christmas!

Sarah's Applesauce

This is an easy recipe and mine turned out well, however I wish the amount of apples was given by weight. Four apples, depending on the size, can differ greatly for yield. Also, I cut back the water to about 2/3 cup and still had a little too much water. I mashed it in the food processor and it turned out very nice.

Very tasty and easy! I used Napa cabbage and it turned out well. I do recommend shredding the cabbage as the recipe calls for rather than grating, as I grated and it made it a bit soggy.

Greek Pasta with Tomatoes and White Beans

This was easy and tasty. The feta really makes this dish. The recipe didn't call for straining the tomatoes so I didn't, but I recommend it. The sauce came out a little watery. Also, it seemed like there was a lot of sauce for the amount of pasta called for, so I would recommend either doubling the pasta or halfing the sauce.

Blackened Fish

This was excellent! However, the amount of butter called for was waaaaay too much. I used less than half of what was called for and it was more than enough. Very yummy spicing for this fish. I used trout and next time plan to try it on some catfish.

Black Beans and Rice

This gets four stars because it's a great start for a lot of things and it was so darn easy. On its own, as other reviewers pointed out, it was pretty blah. I ended up adding a can of Rotel tomatoes to spice it up, served it with shredded cheese and sour cream. Very yummy. But I could see doing it with different types of beans and spices to make a wide variety of easy dishes, like using white beans and italian seasoned tomatoes.

Four Cheese Macaroni Casserole

This sounded a little wierd at first but it turned out quite good. I didn't have any feta so I had to do without, but it was still very good and I'll bet with the feta it would be even better. I saw some of the reviews saying it was dry so I didn't drain the tomatoes. Seems to have added enough moisture. Next time I'll top with some bread crumbs. Yummy and quick and easy - can't ask for much more than that!

Easy Four Cheese Lasagna

This was very good and super easy, espeically if you're using pre-shredded cheese. I totally agree that one jar of pasta sauce isn't enough. I halved the recipe and used a full jar just on that. I'll make this again!

Three Bean Soup

This would have been a 3-star recipe, but it gets 4 just because it was so unbelievably easy and fairly tasty for so little work. I think this would be good sprinkled with cheddar and served with tortilla chips. I had it with some pita bread and it was good. Needed a little salt, but that's easily fixable. Thanks for a good, easy recipe!

Good Old Fashioned Pancakes

These were very yummy. I followed the suggestions of some of the other reviewers and reduced the salt and baking powder and added a little vanilla extract and made sure my liquids weren't cold. They turned out great - not lumpy at all. I served mine with fresh chopped peaches and powdered sugar.

Quick Vegetable Curry

I agree with some of the other reviewers who thought the amount of spices was insufficient. I almost doubled everything and still felt that there was something lacking. If I make this again, I'll add cayenne for sure, and maybe even some cinnimon. The coconut milk almost made me want to add something a little sweet. However, I really liked the mix of veggies and beans and I thought they went together well. I'm always looking for new things to do with beans!

Spicy Black Bean Cakes

I enjoyed both making and eating these versatile little cakes! They were very easy to make and I can see lots of potential for other flavors, such as making them with ginger instead of cumin for an Asian style cake. Mine turned out rather dry, though, so I will likely use less breadcrumbs next time. I was a bad girl and didn't make the lime sour cream but instead served it with fresh home made guacamole on top and it was super yum!

Tuscan Style Bean Soup

This soup was very pretty but was lacking in flavor on its own. I only made minor alterations (vegetable stock instead of chicken, since I'm veg, and ditalini instead of sea shell pasta.) If I make this again, it will have more garlic, more thyme (maybe dried would work better in this case?), more spinach and less pasta. Also, I had to add another cup of stock otherwise it would have been thick stew instead of soup.

Greek Orzo Salad

I loved this salad! I knew it was going to make a TON so I cut back on the amount of everything by about a third and still ended up with plenty. I really enjoyed the way the flavors worked together; it was very satisfying. I would be proud to take this dish to any get-together with family and friends this summer. Thanks Patrice!

Lentil Soup

I'm not sure what others are seeing in this soup that I'm not. I felt that it was pretty bland and I had to add a lot of salt to make it taste better. I made it exactly according to the recipe but was very unimpressed. I added liquid smoke to some leftovers and that helped a little, but I won't make this one again.

Bean Quesadillas

To me this recipe is a good start. The flavors work well together but some items were a little out of proportion. For instance, 1 cup of cheese (if you're making 6) is way too little. Also, you'll note that many other reviewers were adding other things. That's because on it's own it lacks character. Next time I'm going to add some jalepenos or crushed red pepper. As far as the frying, I don't see why it was necessary. I spritzed the pan with some olive oil before putting the tortilla in the pan and it worked phenomenally well. Nice, golden and crunchy. Forget a quarter cup and just squirt some olive oil into the pan before each quesadilla goes in. Like I said, a very good start and I will make this again with a number of revisions.

Spinach and Feta Pita Bake

This was a great recipe - I really enjoyed it. Very fast and delicious, not to mention healthy :) I must have used smaller pitas because mine averaged out to less than 200 calories each. A little hard to eat but well worth it - keep the napkins ready. This one's a keeper.

Spinach and Potato Frittata

This was a great dish - so easy and tasty. You could really do anything with it. Next time I'll add more spinach, less potatoes and maybe throw in some mushrooms. YUM! Next time I'm looking to clean out my fridge I'll make this. Thanks!

This recipe was easy to make and pretty tasty. I think it needed more kick so next time I make it I'll probably add some crushed red peppers and maybe another clove of garlic.
