Fabulous Fajitas

I thought these were very yummy and very fast. Who would have thought!?!! Great little recipe! I left out the green pepper because I"m not a green pepper fan!

I have a few things to say... one person was talking about chorizo and capers and olives ... that must be the Puerto Rican kind because we are Cuban and while we do use cumin, we do not use all that other stuff. If you want to try something the way my abuela does, use beer instead of wine and use fresh saffron. It's expensive but tasty! We don't use parsley nor paprika. We do put vigo in or bijol and we also put a packet of Sazon con Azafran. I do put some fresh lemon on my chicken and sprinkle cumin on it. These are just ideas to incorporate. Incorporate some or just a couple. Salud!

Candied Jalapenos

I had these at a party and they were absolutely delicious! When some friends and I asked the host how to make them, he told me he would sell us a jar at $20 a jar. We all laughed at him thinking he was kidding but he wasn't. The last laugh is on him because now I can make my own and hand the recipe out! Thank you for this FREE recipe!

Marinated Grilled Shrimp

I am on Weight Watchers and so I decided to try this recipe. I used less olive oil and it still turned out so delicious. I am one of those shrimp eaters that the only way I can eat shrimp is to have cocktail sauce. I didn't need any with this. I normally have shrimp left over and this time my husband and my daughter were asking if there were any more.

Bacon Cheese Frittata

Very easy and very good. I just wanted to add the definition of a frittata as I think people might be confused. A frittata is an open-faced omelet which means that it's going to be thin and not thick like a quiche.

Baked Ziti I

This didn't do it for me. I love baked ziti, but I don't know what it is that I didn't care for. I followed the directions. I felt like it needed some zest or something. I'm wondering if it was the sour cream. I don't know, just different to me.

Angela's Awesome Enchiladas

These were better than in any restaurant I have ever went to. I only did two things different. I had made a pulled pork recipe from this site and had leftovers, so I used the pork! DELICIOUS! The other thing was that I only put the sour cream mixture (the one cup) in with the enchiladas and not at the bottom of the pan. The inside of these enchiladas is SOOOO tasty! The secret is in the seasonings!!! Thank you so much. I can't wait to make them for my mother, the Enchilada Lover. UPDATE: This is still my favorite recipe and my mother asks for them all the time. I quit putting the sour cream mixture inside the enchiladas and I go to the local store and picke up a rotisserie chicken. This has cut the time in half and makes it an easy meal to make on a weekday/work day. They still taste absolutely delicious. I get the best raves about this recipe.

Mexican Rice II

WOW! I have looked all over the place for a good mexican rice recipe and this is it. My daughter got seconds. I put the oil in the bottom of a pot and sauteed the onion and a little bit of green pepper. I then added the rice and browned and then added the spices. This was absolutely delicious and mine came out perfect. I must say that I normally have trouble with a few pieces being hard, but there were no hard pieces. I let the ingredients all boil for about three minutes and then put the lid on. I stirred it with nine minutes left of cooking. FAB!! Okay. I'm trying with brown rice tonight. I'll let you know!

Chicken Marsala

This is a good recipe. I changed a few things. I didn't flour the chicken and I added four garlic cloves, and had to use cornstarch to make the sauce thick. I also added procuitto and put fontina cheese on top of the chicken. It was delicious.

Bananas Foster II

This is absolutely DELICIOUS!! I had some left over bananas and wanted to use them up and this was the PERFECT recipe. Do not change a thing with this recipe. I can't wait to make it for some friends at our dinner night.

Japanese Zucchini and Onions

One word "YUMMY". I did use 2 tbsp of sesame oil instead of vegetable oil which was very good. I think either way would be delicious! Such an easy way to to do veggies for my Asian meal. I will do this from now on. My daughter LOVED them.

Italian Chicken Bow Tie Pasta

My daughter is in private school and has to bring her lunch every day. She is fed up with sandwiches and tonight she absolutely refused for me to make a peanut butter and jelly sandwich for her lunch tomorrow. I came on Allrecipe to see if there was anything else I could make and your recipe popped up. It just so happen that I made chicken tonight for dinner. I put everything in there and added some parmesan cheese. She tried it before she went to bed and asked me to put extra in there for her friends to taste. Thank you!!
