Italian Pocket Sandwiches

I used ground beef because that's what I had, I also added a bit of sauce in with meat mixture. Toasted pitas in my toaster oven and skipped the olive oil. Picky kids liked it, overall a quick easy delicious weeknight meal!

Hurry-Up Ham Carbonara

Wow! My family went crazy for this! Didn't add the onion or parsley and forgot the margarine and was still super delicious! Quick, easy, and terrific way to use leftover Easter ham!

Beef Chimichangas

Man o' man these were so yummy! I made adjustments based on what I had on hand: used ground turkey, 1T homemade taco seasoning (chili pwdr, dry mince onion, cumin, oregano, paprika, salt, pepper), couple ounces green chile enchilada sauce, 1 tsp vinegar, only bout 1/2C cheese, about 3T of butter. Served with salsa and sour cream over a bed of lettuce. So so so good!

Lemon Pepper Chicken and Gravy

Loved this quick easy delicious recipe. I added a bunch of mushrooms and left out the red pepper bc that's what I had. I also only used one packet of gravy and had more than enough sauce. Yum, yum!

Corrigan's Minestrone

Wow! This was delightful! The only changes I made was to halve it, use chicken broth instead of vegetable b/c that's what I had, doubled the beans, used about 1/2 of the amount of macaroni and only simmered w/ them for about 5 mins, and used a healthy squirt of ketchup instead of tomato paste - b/c I just don't like the flavor of the paste. LOVED this soup! Perfect hearty soup for the cooler weather! update: noodles did swell up, but still delicious.

Homemade Chewy Granola Bars

These were awesome! Was searching for a granola bar similar to prepackaged famous name brand so I could modify milk free products for my kid with special dietary needs and these were delicious! Whole family couldn't keep their hands off 'em! Thank you sooooo much for sharing!

Spaghetti Pizza II

This was delicious! The only changes I made was to use ground turkey, left out the American cheese, and reserved a bit of the spaghetti sauce without the meat in it to toss with the noodles before pressing into pie plate. Would definitely make this again! Great alternative to the busy weeknight spaghetti dinner! Thanks for sharing!

Best Darn Minestrone Soup Around

This was super delicious! Perfect for those meatless Fridays! I am honestly not much of a vegetable soup person but this was THE exception! For the mixed vegetables I used a frozen 14oz bag mix that had: brocoli, lima beans, carrots, and squash and half a 16oz bag of a frozen pea/carrot mix, and a full package of frozen chop spinach. I halfved the recipe and used 3T of Smart Balance spread instead of butter and used whole milk because that's what I had. Even with these mods there was no lack of flavor! Yum! Yum! Oh, and I was short on time so only simmered for about 30-45 mins for the first step and 30 mins for the last step and it was still fantastic.

This is such a fun recipe! Maybe I am slow, but for me it was pretty time consuming, but turned out so cute! Was the first thing to go at the Halloween party we attended (and there were TONS of food choices!) Enjoy!

Chicken and Noodles

Wow, this is not normally the type of recipe I make, but I had some leftover rotisserie chicken to use up and needed something quick. It was a huge hit! My super robo picky kids loved it! Toddler had 3 servings and preschooler ate all of his!

Sweet and Sour Chicken II

Yummy! I cooked chicken in a large skillet then added sauce ingredients (using cornstarch instead of flour, premixed it in the soy sauce to avoid lumps), let it thicken in the skillet then added the vegetables (substituted 1" pieces of vidalia onion instead of the celery). Less dishes to wash! Simple, easy, delicious! Perfect!

Erin's Indonesian Chicken

I modified the recipe as follows: instead of chicken chunks - butterflied chicken breasts completely in half. In the same skillet sauteed half of a sliced sweet onion, gave sweetness to counter pb, think pb&j (omitted green onion). Used angel hair pasta instead of rice. I also used asian sweet chili sauce instead of the paste. To serve, layer on each plate: pasta, green beans, chicken breast, onion, then drizzle with good amount sauce. Lovely presentation and wonderful mix of flavors!

Fierro Chicken

The recipe didn't specify to use red or green enchilada sauce - I used red b/c that's what I had. Just used whole can of sauce and next time I would just use the whole (1/2 lb) pkg of fresh sliced mushrooms. I omitted the chili powder because used HOT enchilada sauce and thought there would be enough spice (turned out great). This was simple and so delicious! Wonderful over rice to soak up that great sauce. Not very pretty to look at, so wouldn't serve to company though.

Four Cheese Macaroni

I have finally found it! Best mac n cheese! (and trust me i've tried a ton of recipes!) I omitted the egg because, well, I just don't like it. Delish! Might cut back on the butter a bit, pretty greasy, but yum!

Gramma's Cream of Broccoli

Yummy! To make it even easier I used a bag of steam fresh microwave broccoli. I used chicken broth instead of water and omitted the onion. Seasoned to taste w/ s&p and it was perfect! Served w/ some grilled cheese for a 10 min dinner!

Pizza On The Grill I
