Taqueria Style Tacos - Carne Asada

Made these tonight and we LOVED them! We sliced the meat before marinating to get full flavor. Loved the combination of the mild red salsa and the tangy onion relish. We pan-fried our corn tortillas in a dab of oil to make them crispy. This also keeps them from getting soggy with meat juices. We didn't cook off all the liquid because we like a juicy taco filling. A real winner. Would give it ten stars if I could. Doesn't need all the standard American taco accouterments - lettuce, tomato, sour cream, etc. Were wonderful and more authentic all on their own.

Italian Spaghetti Sauce with Meatballs

This is a fantastic red sauce, and the meatballs are flavorful and perfect! We used seasoned bread crumbs. Definately a keeper. We'll be making this again.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

This TOTALLY rocked! We loved it. Didn't have a red chili pepper, so used red pepper flakes, and omitted the butter from the sauce. Is a great summer meal for the grill. That marinade is awesome. We added extra pressed garlic and just loved it.

Cream Cheese Penguins

I made my little March of the Penguins the other night for a Potluck and they were a huge hit! So dang cute, I just couldn't quit looking at them and giggling. I'll definately make them again, but I'll remember others' advice of flavoring the cream cheese and maybe piping it into the olives with a baggie. Loved them!

Caramel Popcorn Balls

This recipe was awesome. I've made it several times and it's been no fail each time. My only comment is, much like other's comments, the recipe calls for way too much popcorn. We find it the perfect amount of caramel for one bag of microwave popcorn. And it's so easy to make too! Just make sauce in a pot, dump popcorn in a bowl and pour caramel over popcorn. I made it into balls for Halloween last year, but now we just eat it out of the bowl on movie nights.
