Herbes de Provence Roasted Chicken and Potatoes

Reviewed: Jan. 21, 2013
Great weeknight meal! I used chicken thighs which I skinned to remove most of the extra fat/calories. I also added 1/2 large sliced onion for extra flavor, and doubled up on the potatoes. I also added some extra olive oil and some Montreal steak seasoning to compensate for the extra vegs. The chicken came out crispy on the outside, and moist on the inside. The vegs were slightly crispy on the outside, and perfectly seasoned. Easy and Delicious! Next time I won't bother lining the pan with foil because for me, the foil stuck to the pan anyway. I will be adding this recipe to our rotation.

Sweet Potato Casserole VII

Reviewed: Feb. 2, 2009
These were incredible!! Ever since going to Outback and having the mashed sweet potatos that taste almost like a dessert, I've wanted to re-create them at home. This was every bit as good!! I doubled the vanilla, and added a little extra sugar because I had more than 3 cups of sweet potatoes. My kids had 3 helpings!!! The crunchy toasted coconut topping was simply wonderful.

Salsa Guacamole

Reviewed: Jan. 25, 2009
This guacamole is excellent! I had no idea how quick and easy it is to make. I originally made half the recipe, and my kids gobbled it up and asked for more. We enjoyed it all summer!

Sunshine Chicken

Reviewed: Jan. 25, 2009
This is a good and easy weeknight recipe. I used skinless thighs, 1/2 ketchup and 1/2 bbq sauce, and substituted honey for the corn syrup. Also used a big zipper bag to marinate the chicken in the sauce for a little while before baking. This is also a quick way to get the sauce distributed all over the chicken. While baking, make sure to drain the fat each time you baste - the sauce sticks to the chicken much better without all that fat. My family really enjoyed this. For next time, they requested a buffalo-style version of this recipe. I'll have to experiment with adding Frank's RedHot sauce...

German Sweet Chocolate Cake I

Reviewed: Jan. 25, 2009
This cake was delicious! Normally, I don't bake cakes from scratch, but this one was well worth it. I used walnuts instead of pecans, and used 2 9-inch rounds, baking them for 25 min. I also followed Jay Eubanks tips about making the icing, as I'm inexperienced in making icing with eggs in it. Make sure to look at the number of ounces of Baker's German chocolate needed (4 oz.), and not just the number of squares. The box I bought had 4 ounces of choc. but about 20 or more squares. Initially I made this mistake, but luckily was able to correct it before it was too late. Cake was wonderful - as good as my Grandma used to make!

Taco Salad II

Reviewed: Jan. 25, 2009
This is a good basic Taco Salad recipe. I love recipes like this where you can be creative and add the ingredients you like, and it comes out great every time! I used Romaine instead of Iceberg lettuce, and added small red beans, and a small can of Southwest corn. I also used Doritos and an 8 oz. bottle of Catalina Dressing. I made this for my daughter's birthday party, and it got rave reviews from everyone. It made a huge bowl, and there was only a tiny bit leftover. As other reviewers have said - Do NOT refrigerate overnight with the dressing and chips mixed in.

Basic Chicken Stock

Reviewed: Apr. 12, 2006
This recipe was excellent and so easy! I took another reviewer's advice and added a turnip, parsley stalks, and some pepper. Who knew making your own stock was so easy? As an added bonus, your whole house smells wonderful while its cooking. I cooked it for 2 hours.

Oven Omelet

Reviewed: Apr. 11, 2006
My family loves this recipe! I made it more like a western/southwest omelet with lots of sauteed veggies like green pepper, onion and zucchini, and salsa. I also used sharp cheddar cheese and added some hot pepper cheese to spice it up. It's a great basic recipe to start with, and then you can add whatever your family likes. My daughter requests this all the time!
