Whoopie Pies VIII

I was having a sweet tooth craving, and these definately did the trick!! I dont think I could recommend a better Whoopie Pie recipe for the cookie/cake part!! I did use a different recipe for the filling because I tend to like the cooked filling versions better. These turned out so moist and perfect!! I did not have any buttermilk on hand, so I added a Tablespoon fresh lemon juice to the cup of sweet milk and that worked out fine. They have such a delicate flavor, not overpowering and not bland either. I will be using this recipe again and often!!

Brown Sugar Smokies

If you are contemplating trying these, I have four words for you.. you MUST try them!! They are unbelievable!! These will be the first appetizers to go at any get together you have. A few of my guests were a bit hesitant of these while i was making them, they saw the raw bacon and weenies and sugar, but once they came out of the oven, they were gone within twenty minutes if even that long and we only had about 6 people there!! My husband told me these were to be added to the "must have to eat list" at our next party. I would definately give this more than 5 stars if I could, and will most definately make them again and again!!

Easy Apple Cinnamon Muffins

This muffin recipe is a winner in my book. They taste out of this world!! I actually grated the apples instead of chopping them up. And I added rolled oats to the streusel topping instead of flour. To those who said there was too much butter in the topping, I dont think you are mixing it up quite enough. You have to cut the butter in really good. I plan on making these again soon, but using whole wheat flour and 1/2 applesauce instead of oil like other reviewers stated. Great recipe!

Jif® Peanut Butter Blossoms

Good flavor, although light on the peanut butter taste, but I prefer mine to be more soft and chewy, these turned out too crisp even when I shortened the cooking time. Maybe it was the butter flavored crisco? Next time if I make this recipe again, I would try plain crisco.

Rainbow Cookies

I tried my first rainbow cookie from a coworker recently, and immediately fell in love with it. Since she got them from a bakery in NY,and I live no where near there, I searched and found this recipe. The recipe was not all that complicated, the worst part was separating the dough into 3 parts and spreading it in the pans. I will add that it is VERY important to beat the egg whites and fold them into the batter, another reviewer stated that they opted not to do this part and that it is not necessary, but this step adds a much needed texture for these cookies!!! Something I would change would be to add more Almond Extract to the dough. I added about a teaspoon as one reviewer stated, but I think next time I will up it to one and a half or maybe even two. I used seedless raspberry preserves, and maybe I used too much, but it overwhelmed the almond cookie flavor, so I dont know if using jam instead of preserves would be less intense or not? My husband said they tasted like tiny jelly sandwiches and couldnt taste the "cookie" part which disappointed me because I thought these would be a hit. I added shortening to the melted chocolate and had no problem with it cracking when sliced. I am giving this recipe 4 stars, in the hopes that my next batch will turn out much better!!

Snickerdoodles I

This has got to be the best snickerdoodle recipe ever!!! I agree with some of the others, that you MUST use the shortening as the recipe states and not substitute for butter if you want these to be real snickerdoodles. The butter makes them turn out flatter, and more golden and crispy.. these cookies are meant to be soft, chewy and moist. A real crowd pleaser!! So glad I tried this recipe!!

BBQ Glazed Homemade Meatballs

This is an excellent recipe for meatballs!! The sauce is superb and compliments the meatballs wonderfully. I would recommend using ground sirloin or a leaner meat though, as the fat/grease in the ground beef can overwhelm the sauce somewhat. It is definately going to be a frequently used recipe in my house though!

Banana Pancakes I

These were outstanding!! I dont usually review a recipe unless it makes a big impression on me. My husband and toddler loved these and kept asking for more! I didn't change a thing with the recipe. This is definately a keeper!! Thanks Andrea!

Lemon Barbeque Pork Chops

I think this recipe has great potential.. While I am not a big fan of "baked" pork chop recipes, I think this one is excellent under the broiler. I just personally think that broiling is more flavorful than baking. The lemon juice accents the barbecue sauce with just enough "zing" and adds great flavor. I highly recommend people to try this, but with broiling 4-5 mins on each side instead of baking it in the sauce.

Amusement Park Cornbread

My picky daughter loves this cornbread. It does remind me of the Jiffy Corn Muffin mix, but better since its homemade. Very sweet and fluffy.. It is more of a cake than a muffin, but I will be making it again.

Juicy Pork Chops

This is the BEST marinade that I have ever tried for pork chops, and I am VERY picky!! I have made this numerous times now, and my family LOVES it when I make this. These are soooo good under the broiler, its the next best thing to grilling them outside. I added fresh chopped garlic, which I personally prefer over minced jarred garlic. If you are using thin chops, you may not want to marinate them quite as long as suggested in the recipe or they will be a little salty. Great recipe and so simple!

Chocolate Cobbler

I have made variations of this dessert before in the past,and this is by FAR the best recipe I have ever tried!! I added about 2 heaping Tablespoons cocoa(instead of 1.5 TBS) and that gave it a little extra chocolate flavor.. I wouldnt change anything else about this recipe though. It is definately a keeper and I will be throwing out all the other knock offs of this recipe!
