Dump Cake V

I've been a fan of Dump Cake for years. I got the recipe from my grandmother when I inherited her recipe collection. I recommend using either a 9x13 inch pan or an 8-9 inch square pan. I think the sqaure pan works best as it makes the cake thicker. This is also good without pecans and coconut, whatever suits your taste best. It's great served warm or at room temperature.

Dump Cake IV

I've never baked it in a bundt pan though, and since it's more like a cobbler than a cake I'm not sure why you would. I recommend using either a 9x13 inch pan or an 8-9 inch square pan. I think the sqaure pan works best as it makes the cake thicker. This is also good with pecans and coconut added in. It's great served warm or at room temperature.

Peanut Butter Cup Cookies

Just made these this afternoon. I've been wanting to try them for a long time. Peanut butter cookies are one of my favorites and I love, love, love peanut butter cups, so what a great combo right? The cookies are easy to make, but the dough is pretty soft, so instead of rolling them into balls, I just scooped out some dough, dropped it into the mini-muffin cup and pressed it down into the cup some, which worked out fine. The only thing I found was that I got a lot more than 40 cookies, I got about 50 and could have gotten more as I filled some of the muffin cups too full.

Sausage Balls

I've been making sausage balls for years - since I was a little girl! The only difference between my recipe and this one is that I use 3 cups of bisquick. I believe the extra cup makes the sausage balls seem a little less greasy, although while they are baking lots of greasy bubbles out of them, there's no avoiding that. They are so good! A definite Christmas tradition in my family!

Chunky Cheesecake Brownies

The brownies themselves are decent. I like my brownies fudgy and these are somewhere in the middle, not all that fudgy, but not cakey either, which I think is thanks to the cheesecake batter swirled in. The cheesecake batter is very good, I would give that part of the brownie 5 stars if rating seperately. These won't get tossed out, but I'll either try another brownie batter recipe next time or I'll play around with this one. The brownies are by no means overdone so that's not a problem. After being refrigerated they are a little fudgy, so I recommend them cold. Still searching for my perfect fudgy brownie recipe!

Mrs. Sigg's Snickerdoodles

I love cinnamon, so when I saw this recipe had been rated so many times I had to give it a try. I've had snickerdoodles before but never made them myself so I have no other recipes to compare this one to, but they were really good. After experimenting with the baking time I realized one minute more or less can make a big difference. When making the cinnamon sugar mixture I thought the ration of cinnamon to sugar looked a bit much, so I left the cinnamon amount the same and added 2 Tbsp more of sugar. I think still more sugar would have been good. I used my Kitchenaide mixer on these cookies and they were great, not overmixed whatsoever. They didn't look quite as crackly as the allrecipes photo, but they were still beautiful.

Crispy Baked Chicken

I used boneless skinless chicken breasts, other than that I kept the recipe as is. The flavor was fine, nothing to die for, but we enjoyed dinner. However, the breading was soggy. I can't come up with an explanation for it, but it just would not crisp. Otherwise I would have given the recipe four stars.

Clone of a Cinnabon

I give this recipe 4 stars instead of 5 based on personal preferrence. I don't have a bread machine so I took the advice of another reviewer on making the dough the standard way without the help of the bread machine. Aside from the fact that the recipe was a little time consuming like any yeast bread recipe it was really simple. The dough came out great - a good texture and wasn't sticky at all. I used the dough hook on my mixer, so the kneading part was really simple. As for why I give the recipe 4 stars instead of 5? I think the filling needs more cinnamon, and next time I'll experiment with the icing making it with all cream cheese instead of butter and cream cheese.

Doggie Biscuits I

These doggie biscuits will definitely be a repeat for my boys! I made them as holiday treats and they were a huge hit. The cookies couldn't have been simpler to make, and I had most of the ingredients on hand already. Best of all, I felt good about feeding these to my guys because I knew what they were made of!

Cool Whipped Frosting

This frosting is super easy to make and really delicious, especially if you are a Cool Whip lover like I am. I used this frosting for my family's traditional pineapple cake, which we have every year for our Christmas dessert. The cake has always been frosted with a simple vanilla icing, but this year I wanted to try something different, not so sugary sweet and this worked out great. Since this frosting is lower in fat, it definitely cuts out a little of the guilt, which I love!

Eileen's Spicy Gingerbread Men

This recipe was a huge flop. I give it a two because the cookies had a good flavor, I should say the 6 cookies I was actually able to make. I followed the recipe and tried to work with some of the suggestions of those who rated the recipe with 4-5 stars. The dough was very very soft. So much so that I had to roll it out between wax paper and freeze it before I could cut out the gingerbread men, and even then I had to work very quickly. I ended up so frustrated that I threw 75% of the dough away. Better luck with another recipe. I had high hopes! Maybe there will be gingerbread men next year.

Black Bottom Cupcakes I

These cupcakes were very good, especially if you want something chocolate, but don't want to bother with frosting. Or maybe you can't decide between cake and cheesecake? Perfect compromise! Being that these are individual cupcakes and don't have frosting they make a great take-along for a party or get together - less mess. I ended up with lots of cream cheese filling left over, so I made another batch of cake batter and ended up with 26 standard size cupcakes with some of them running over the edges onto the pan a little, so in hindsight I could have had closer to 30 cupcakes. I made one batch of cake batter with regular cocoa powder and one with dutch process, either works fine, I liked the dutch process a little better, the chocolate flavor was a little deeper. Also, I refrigerated the cupcakes overnight and think they were better the next day. *As a note, I wasn't sure how much filling to add to each cupcake, but since the recipe makes so much filling, feel free to be generous with it.

Favorite Old Fashioned Gingerbread

A very good gingerbread recipe. I give it four stars and not five for a few fairly minor reasons. I found the gingerbread to not be as spicy and I would have liked, this is my first time making this recipe, so next time I'll add larger amounts of the spices. My main reason for only giving the recipe four stars is that I found the baking time to be very incorrect. I used the size baking pan that the recipe suggested, however I found the gingerbread baked in about half the time the recipe directed. (I used a dark pan.)

Good Dog Cookies

Best Brownies

An easy recipe with a nice texture. Not a fudgy brownie, which is my preference but also not a cakey brownie, which I do NOT like. This brownie falls somewhere in between which is perfectly fine with me. It takes mere minutes to mix the batter up, but following the recipe doesn't make much batter. Using an 8 inch square pan left me with very thin brownies, so if I make these again, I will definitely double the recipe and continue using an 8 inch pan. The brownies weren't as chocolatey as I would like, so another change I intend to make is trying them with Dutch cocoa next time. I skipped the icing because they were good enough without, and with such a thin brownie I didn't think icing was a good idea. I also added toasted pecans for a nice crunch.

Gingerbread

An easy recipe perfect for when you want to bake gingerbread, but don't feel like making a special trip to the grocery store for special ingredients. This recipe doesn't yield quite the spiciness I like when it comes to gingerbread, but it was definitely enjoyable.

Aaahh! Potato Soup

This soup was so good! And even easier than I imagined it would be - no kidding! Instead of using 2 Yukon Gold I used 1 large baking potato. I also used 1 can of regular chicken broth in place of the condensed broth. Everything worked out fine on both accounts. Next time I'll add some of the bacon in while the soup is cooking to marry the flavors a bit more, but as is the recipe was definitelly a hit.

Sweet Potato Casserole II

This recipe was everything I hoped it would be. I was out of orange juice so I omitted that, and substituted unsalted butter for the low-fat margarine and added more brown sugar along with a bit of pumpkin pie spice. And I used a 9 inch square baking dish instead of a 9x13, which I think would have made the casserole way too thin. It sounds like a lot of changes, but all were minor so I don't imagine the taste of the finished dish was altered too much. Either way it was delicious!

Potato and Cheese Frittata

I give this recipe 2 stars because I want to give it the benefit of the doubt. I want to feel like perhaps some of my disappointment with this recipe is an error on my part - realistically I know I followed the directions to the letter. The potatoes didn't cook in the instructed about of time, as I knew they would not, so I cooked them a bit longer. The recipe just really didn't have alot of flavor in my opinion. It was simple, but simple isn't everything. I would have enjoyed scrambled eggs with hash browns on the side much more.
