Sugar Cookie Glaze

A good & easy glaze. Perfect for when I want to make sugar cookies, but don't want all the time and effort that goes with royal icing. Doesn't make a huge batch, and the glaze is thin, so I recommend spooning over the cookies or dipping them in the glaze.

Cream Cheese Bars I

SO good & super easy! I sprinkled mini chocolate chips over the top before baking and the result was very much like a blondie only a bit gooey on the cream cheese layer. They would also be great with pecans, toffee chips, or white chocolate chips added in or sprinkled on top. I think next time I'll stir the chips into the cream cheese batter and see if I like that any more or less. Also, it doesn't specify how to combine the cream cheese with the eggs and confectioners sugar, but I opted to use a handmixer to beat it all together.

Pineapple Fried Rice II

First of all, I love, love, love fried rice AND pineapple so from the beginning this sounded promising to me. I made this for my Luau themed 30th birthday party and loved it. I did make a few changes. I omitted the ham because I know everyone doesn't eat pork, I used a diced yellow onion (probably about half) in place of the green onions, I omitted the sugar and used teriyaki sauce in place of the soy sauce. Also, I omitted the white pepper. SO good! I will definitely make again.

Aloha Coleslaw

I combine this with the Hawaiian Coleslaw recipe and made a modified version for my Luau themed 30th birthday party. I also added a can of mandarin oranges, drained along with 1/4 tsp ginger. Overall it was pretty good, and went well with the theme, but I think it could have used more flavor so next time I would play around with the measurements.

Hawaiian Coleslaw

Made this for my 30th birthday party and this went along great with the Luau theme. I like a good bit of dressing in my coleslaw so that everything is nicely coated, so I upped the amount of mayo to 1 cup, which was the amount used in another similar recipe - 1/3 cup just didn't seem like hardly any for 4 cups of cabbage! I did not have any white pepper so I left that out, and I may or may not have omitted the nutmeg. Overall, it was pretty good, but I felt like it needed more ginger and perhaps a bit of sugar. I would make this again, but play around with the measurements to make it more flavorful.

Strawberry Margarita Cake

I would give this 3.5 stars actually. I did not go the whipped topping route for the frosting, I made a lime buttercream that was a really good compliment, and made cupcakes. The recipe was easy and got really good reviews from others, my reason for only 3.5 stars instead of 4 or a full 5 is because I would have preferred a more pronounced strawberry & lime flavor to the actual cake itself. It was good, but didn't pack as much flavor as I had hoped for. Also, the cupcakes were a tad dry/crumbly, which I think may have been because of the use of egg whites and not the whole eggs, but then again, at the time I made these I was still getting use to using a new oven - convection at that, which was totally new to me, so that could have been my issue and not the cake, so I won't count off for that.

Eggnog Cheesecake III

SO good! The perfect elegant, yet not too challenging holiday dessert. I had plenty of eggnog leftover from making my yearly eggnog Christmas cookies and wanted to make a cheesecake for a family Christmas celebration, so it made perfect sense. I followed several different suggestions and made some minor adjustments to the original recipe. I will admit, that although I've made enough cheesecakes that I would say I'm a fairly experienced cheesecake baker I have never prepared my batter in a food processor so I was a little nervous but since I already had the processor out to make my crust I thought I'd give it a go, and it worked out great, plus I didn't dirty up my mixer! The changes I made are as follows: - for the crust I added 1/2 tsp cinnamon and 1/4 tsp nutmeg - I upped the eggnog to 1 cup in the batter - replaced the rum with 1 Tbsp vanilla extract - added 1 tsp cinnamon and 1/2 tsp nutmeg to batter Also, unlike many of the users I did not use a waterbath, nor have I ever. The consistency was great and no cracks!

Eggnog Cookies I

This appears to be the exact recipe i've been using for several years now. I can't remember my source, some other now unknown website. Regardless these cookies are great! I'm not an eggnog drinker, but love these cookies. They're soft and have just the perfect amount of spice. You will always find Eggnog Cookies amoung my holiday baking goodies somewhere.

Mozechilli Casserole

I've been basically making this same casserole off and on for years. It's stick to your ribs satisfying, and something most everyone will enjoy. It's fairly easy, even for the beginner cook and affordable. Goes great with garlic bread and a salad.

Beef Barbecue Biscuits

I served these along with some other apps on a recent girls night and they were a hit with my friends and I. This is a straightforward and fairly simple recipe, best of all, pretty inexpensive. If you're a fan of sloppy joes you should definitely like these. I didn't feel like 1/2 cup of barbecue sauce was enough, so I used more like 3/4-1 cup, and I like mine a little sweet so I was generous with the brown sugar. In addition, I added a few teaspoons of mustard because it seemed like it needed a little something. The mustard and the additional brown sugar really all depend on your taste and/or what barbecue sauce you are using. Also, I didn't have any minced dried onion so I used about half of a medium onion, diced and sauteed.

Chex® Pumpkin Pie Crunch

Yum! Super easy and delicious. Not only does this make a great snack, but also a nice gift to give during the holidays. I like that unlike some other types of Chex mix this doesn't make a HUGE batch that I needed to scale down and didn't require that I purchase umpteen types of Chex cereal. I actually used just rice, and cinnamon Chex and it came out great.

Sausage and Potato Breakfast Skillet

OMG! So good! I will definitely make this again, even my picky eater loved it. I altered the recipe a bit - I used 1-1/2 cups precooked Jimmy Dean sausage crumbles, so the sausage cooking step was omitted, I simply added the sausage just before scrambling the eggs in to heat all the way through. I used half the amount of diced potatoes, half a bell pepper, half an onion, and added five beaten eggs after all the veggies were fully cooked. I cooked the eggs until scrambled. It yielded two hearty portions, with enough leftover to have 2 good sized breakfast burritos the next morning. And FYI, this makes a GREAT breakfast burrito filling.

Down-Home Breakfast Special

BLT Salad

I'm giving this recipe 4 stars because I didn't actually try the dressing yet. I used store-bought creamy ceasar dressing, and the salad was awesome! It's a simple salad with classic summer flavors. I've made this salad before finding this recipe, but figured since it's so good it deserves a review!

Robbi's M&M Cookies

I wasn't all that impressed with these cookies. They taste decent, but I wish I could have just made me go-to chocolate chip cookie recipe and added some M&M's. I followed the advice of others and used butter in place of the shortening. Since I used butter I chilled the dough for a bit before baking. The cookies come out a bit on the thin and flat side. They are soft and chewy which I like, but despite the M&M's they just didn't result in a very pretty cookie.

Monkey Bread Made Easy

OMG so yummy! Super easy, but I had a bit of technically difficulty with mine. I won't let that affect the rating because they were so delicious. I love almost anything with cinnamon and sugar, so these are right up my alley. These should be a HUGE hit with anyone who likes cinnamon rolls. I can totally see myself making these in the future and drizzling a vanilla glaze over them when serving. The issues I had were that I couldn't find 7.5oz packages of biscuits so I bought 1 package of 16.4oz biscuits. Since it was a little bit larger amount I made 9 portions. But the biscuits were Pillsbury Grands, which I think filled the muffin tins a bit too full. The biscuits definitely should be regular size NOT Grands because I poured the butter mixture over the biscuit pieces and while baking some of the sauce bubbled out and into the oven (and I still had a bit of the sauce left over that wouldn't fit in the pans.)

Beef Taco Skillet

I would give this 3.5 stars. Pretty good for a weeknight meal. Overall, fairly easy and quick to prepare, and inexpensive. The dish had a pretty strong tomato soup taste in my opinion, so I might suggest adding sour cream towards the end of the cooking to try and ton that down a bit.

Ultimate French Toast

I've been making french toast for years with pretty much this recipe. It's super easy and so good! It's also really easy to half the recipe or even do a single serving, just reduce the amount of eggs and add just a splash of milk. It's great with or without the cinnamon, but as a cinnamon lover I say the cinnamon only serves to make it better!
