Erica's Delicious Slow Cooker Beef Roast

I made this twice, once with a two pound blade roast and the other with a 4 pound cross rib roast - both times I added a few drops of Worchestershire sauce, and both times about the best roast we have ever had! Not at all dry and very, very tasty. We had the leftovers with gravy on bread so we could enjoy it all over again. I cooked the roasts for about 9 hours.

Herb Rubbed Sirloin Tip Roast

This was a wonderful recipe. I used chopped garlic instead of garlic powder, and eliminated the onion powder and cayenne. I roasted a 3 lb sirloin tip to 130 degrees as we like it rare. I didn't find it too salty with the full amount of kosher salt. I look forward to sandwiches tomorrow.

Insanely Easy Vegetarian Chili

This is a fantastically delicious chili. I used less cumin and chili powder as we are not fans of overly hot chili and it was just flavorful. I used mixed beans instead of just kidney beans, and didn't add celery. I've also varied the type of peppers and used yellow, green, orange or red. We served this at an open house along with a pot of beef chili and both were a hit.

Bow Tie Medley

Nice, quick pasta recipe. I put all the tomatoes into the sauce instead of saving them for the end. I also added some red wine and didn't add the oil with the pasta as it wasn't needed. I put way more mushrooms in as we like mushrooms. Thanks for the recipe.

Easy Strata and Variations

I made this for Christmas brunch the night before using mushrooms, asparagus and red onions with reduced fat four-cheese Italiano cheese. It was delicious! I had 8 people for brunch and we barely ate half of the full recipe. Next time I would cut the recipe in half. I look forward to trying it again with different ingredients.

Mushroom Lentil Barley Stew

This was delicious. I made it with chicken stock and crimini mushrooms, just a few turns of the pepper grinder, and added a sauteed onion as some others had suggested. My husband and I enjoyed it with some cheese scones. Next time I would try adding some carrots and celery. Thanks for the recipe!

Cheesy Sausage Pasta

I made a few modifications to suit my taste and what I had on hand. I used gemelli pasta, and my own homemade sausage, added mushrooms as others suggested, used fresh grape tomatoes instead of stewed, half and half cream, and grated Asiago cheese. It was delicious!! Thanks for sharing the recipe.

Spinach and Orzo Salad

I have made this salad many times. The first time I made it as written, then for convenience I have used a good balsamic vinaigrette instead of the olive oil and balsamic vinegar. I change it up by adding olives, roasted red peppers, artichokes, sundried tomatoes, diced cucumber - it all works. It's good the day you make it and even better the day after.

Roasted Potatoes with Greens

This was truly delicious! I used two regular red potatoes, and fresh rosemary, and put in about 2 cups of spinach. I loved that the spinach absorbed the garlic and rosemary flavour.

Amazing Pork Chops in Cream Sauce

Orzo with Parmesan and Basil

I took the suggestions from other reviewers and sautéed garlic, mushrooms, peppers and zucchini in olive oil, added home-made chicken broth and a mix of orzo/Israeli couscous. I used 1 cup of broth to 2/3 cup of orzo but could have used a bit more broth. I put Parmesan in at the end and about a tablespoon of pesto. Delicious! Thanks for the inspiration!

Cream of Cauliflower Soup With Bacon Gremolata

This is seriously delicious soup. What makes it so good is the gremolata, especially the lemon zest. I made a half-recipe but added a whole onion and a whole rib of celery, as well as 3 cloves of garlic. Instead of half broth and half water, I added a whole carton of low sodium chicken broth and a bit of vegetable broth I had in the fridge. I didn't have any parsley but thought it tasted fine without it. I might add fresh dill next time. Thanks for the recipe!

Fresh Asparagus Soup

This is a tasty recipe. I used chicken stock as that is what I had, and left out the yogourt as I had none. Along with the lemon juice I added the zest of half a lemon. Also, instead of parmesan, I put feta cheese in to serve. Delicious!

Slow Cooker Beef Stew I

This is a great, simple recipe that you can add to or modify according to your tastes. I loved that I could throw it all in together and let it cook all day. I was a bit leery that the beef would turn out dry but it was very tender and moist - I cut up a blade steak which may have had more marbled fat than the usual stewing beef. I added more celery as I like it, and shook up the flour with the broth and 1T Worchestershire, otherwise I stuck to the recipe, stirring every couple of hours. Even my husband, who usually grumbles if I make stew loved this.
