Best Ever Muffins

I suck at baking, but these turned out perfectly! Was surprised that the batter was as thick as it was - I wasn't really expecting that. But they turned out just fine - had 12 beautiful golden muffins! I added a half-pint of red currants to mine. They were part of my CSA and I wasn't sure how to use them...voila! Currant Muffins! Thanks!

White Chocolate Fruit Tart

This made me look like a rock star hostess. It was FABULOUS. I switched out the fruits - used raspberries, kiwi, blueberries and mandarin oranges, and then used the reserve orange liquid for the glaze - but otherwise followed to the T. My crust took about 10 minutes longer, and I was concerned that it looked too thick - but it was great. And I was AMAZED at how fabulous the crust tasted with just the three ingredients. It made such a gorgeous presentation, too. I will absolutely make this again - so easy and delicious. Thanks for sharing!

Glasser's Greek Marlin

I thought this was quite good. We may have had thicker swordfish steaks than others because we needed to cook ours a little longer before they'd flake easily. And I have to say, don't waste your time with this if you're not going to serve it with the feta and the kalamata olives because all agreed that they totally made the dish. Otherwise, even with a boatload of fresh garlic and basil, we would have found it lacking. Oh, and another note. Next time I make this I will simply broil or grill the swordfish and top with the tomato mixture. We didn't think the butter sauce added anything except unnecessary fat. Easy to skip and make this really healthy!!

Mushrooms with a Soy Sauce Glaze

My mom who HATES any kind of sauteed mushrooms begrudgingly took a bite at my insistence, and then immediately went for more. Now she asks me to make them for her whenever she's here. Delicious recipe - thank you!

Serbian Ground Beef, Veggie, and Potato Bake

I thought this was really good. I made without celery and added a diced sweet potato and diced zucchini to the meat while cooking. Also took the cover off last 5 minutes of cooking, then broiled 2 more minutes to crisp up the top potatoes. Still needed more potato, I think. Next time I may use thicker-cut potatoes for the bottom layer (mine turned to mush), and maybe layer meat and potatoes like a casserole. The flavors were great. Will definitely make again.

Sweet Potato Enchiladas

I reduced the recipe (cooking for 3 instead of 6) but kept the full measurement of spices, and I'm glad I did because otherwise I think it would have bland. So...3 sweet potatoes filled 12 small tortillas. The texture reminded me of a tamale. I will make this again, but I think I might actually throw in some cinnamon to the filling - I always sprinkle on my sweet potatoes and it just seemed to be missing. Thanks for the recipe.

Baked Salmon II

We eat salmon at least once a week so I'm always looking for new recipes. Can't help but be a little disappointed with this one. Not sure what we did differently than everyone else, but it seemed like the cooking time was way too long. Our salmon was dry, and we had thicker cut fillets, too. Oh well.

Mouth-Watering Stuffed Mushrooms

Having read the reviews about the overage of filling, I made 15 mushrooms and halved the filling recipe and I had just the right amount. I subbed neufatschel cheese for the cream cheese (a bit less fat) but otherwise prepared as written. I only cooked for 15 minutes and they mushrooms were perfect. I will definitely make these again. Thank you!

Basic Cream Cheese Frosting

Like other reviewers we cut the sugar down - I only used 2 1/2 cups and I can't imagine using more. The frosting was delicious and perfect for our red velvet cupcakes. It makes a LOT of frosting. Yum.

Honey Roasted Red Potatoes

We loved these potatoes. They were the perfect complement to the grilled chicken I served. I did add another tablespoon of honey because I wanted them to be a bit sweet, and it worked out perfectly. The only thing I'll say is that the cooking time really depends on the size of red potatoes you buy. Our reds were a bit on the bigger side and it took us a full hour to cook them. Will definitely add this to the repertoire. Thank you!

Crustless Spinach Quiche

Despite spraying the heck out of my muffin tins I still had a hard time with sticking, but that was the only hiccup. This is a delicious recipe and so easy to make breakfast on the go.

Chicken Breasts in Caper Cream Sauce

EDIT: Made this again with the thin-sliced chicken and it was much better. Still had to doctor the sauce, though - I just find the original recipe a bit bland. Sorry! I followed this recipe to the T but then found the cream sauce to be really bland? I perked it up with some extra lemon juice and sherry, and that was tasty. I would definitely make again, although next time I would use thin-sliced chicken and my adjustments to the sauce.

Mexican Baked Fish

Oh my goodness this just could not be more simple or delicious. I loved it. Didn't do the sour cream and didn't have avocado but a spoonful of Trader Joe's guacamole finished it off wonderfully. Thank you for this recipe - it's a keeper!

Roasted Brussels Sprouts

I rate this 4 vs. 5 stars because I'm still not a sprouts convert. That said, however, this recipe was really quite good. The carmelization was lovely and next time I think I might "help" a few leaves "fall" off because they crisp up wonderfully. Those who have compared it to crispy spinach are dead on. I will definitely try this again.

Oven Roasted Potatoes

This has become a staple recipe. So good. For three people we cut up 4 potatoes (on the small side). I no longer measure the spices, I just shake into the ziplock, and I leave in the oven for 15 minutes to get a good brown sear, and then I flip them over for another 15-20 minutes. Rave reviews from everyone.

Chicken Cordon Bleu II

Oh. My. God. This was AMAZING. I scaled the recipe to 3 and made exactly as is except for the *tiniest* splash of sherry into the sauce at the end. I served it over a mushroom rice pilaf blend and -wow- my husband and my mom RAVED. RAVED! I am a novice cook and it was relatively painless. Will definitely add to my repertoire.

Quick Poached Salmon with Dill Mustard Sauce

Well, gee, that'll teach me. I made the sauce first and wasn't thrilled when I tasted it. Definitely too much of a "tang" as a previous reviewer said. Then I put it ON the salmon (I baked vs. poaching) and wow, was I wrong. Definitely a great match, gave enough flavor to the salmon without overpowering and...no tang! Delicious. Will definitely add this to the repertoire.

Pat's Mushroom Saute

I didn't think I was a mushroom fan until I made these, and now I make them all the time. To make the dish a bit more friendly to my new year's resolution, I've taken to adding a bit more garlic and leaving out the butter and reducing the oil. The mushrooms have enough moisture and the balsamic is so flavorful, I don't really miss it.
