This was a spur of the moment cooking experiment, so I didn't have fresh corn on hand. I opted for a can. I don't think one can was enough corn, I prefer more veggie than breading. This is a great afternoon snack or lunch food. Reheats well. I do not think 3inches of oil is necessary, I chose to do a half inch and they cooked perfectly. I'm definitely a savory girl, so I recommend 1-2 tsp of salt.

Hash Brown Quiche

This was delicious. My family and I don't really like quiche, but the hashbrowns made this really good. I served the leftovers to a friend the next day and she raved about it as well.

BLT Pasta Salad

I took the advice of others and mixed mayo with dry ranch, then added more ranch just before serving. Added peas, and substitutes the onions with green onions. The bowl was practically licked clean!

Zesty Porcupine Meatballs

Easy, budget friendly, and kid friendly. The meatballs are good, but the sauce is kind of boring for adults. I'm glad I didn't make this on a night when my husband was home. The kids loved it, zero complaints from these picky eaters. I followed the advice of baking the meatballs.

Lemon Horseradish New Potatoes

Did not taste the horseradish at all. We like strong horseradish, so I will probably double it next time. I have high hopes for this recipe, I just think the original measurements don't meet our tastebud levels.

Chicken Noodle Casserole I

My kids who hate "mixed food" both exclaimed that they loved this! Hubby went back for seconds at least once. I took the advice of others and added some onions and garlic sauteed in butter, and also added a can of corn and some cheddar cheese. I didn't have enough crackers on hand, so I used what I had, and added some italian seasoned breadcrumbs. Great winter dinner!
