Once I finally got these cooked properly, they were very good, although I can see why some people either cut the hot peppers in half or changed them for something else entirely. I used whole jalapenos, and they were extremely hot, although the cream cheese had the effect of cooling them down. Like everyone else, I had problems with the bacon being too uncooked. Next time will try using the broiler for this. I agree with some of the previous reviewers that these would also be great with regular peppers, tomatoes, onions, or some combination of those. Will try that next time.

Vinegar Based BBQ Sauce

Being a vinegar fan, I was looking forward to trying this sauce. I found it very tasty, but much too salty. I'll try eliminating the salt or cutting it way down next time.

Kielbasa with Peppers and Potatoes

I took some of the previous suggestions and added onion and several cloves of garlic to this recipe. It was quite good, but the general consensus of my family was that it needed more kielbasa and less potatoes. Next time I will try 1 1/2 lbs kielbasa and cut from 6 to 4 potatoes.

Bacon Wrapped Smokies

What a great recipe using just a few ingredients. Served these as appetizers during the football game and they disappeared in 15 minutes. One thing I found was that 40 minutes wasn't really enough time to get the bacon crisp. What I ended up doing was baking 1 hour at 325 degrees, then increasing that to 350 degrees for 15 more minutes. With these changes, they came out "perfect".

Maria's Pepper Steak

This recipe was absolutely excellent! The only adjustments I made were to add 1/2 tsp of both red pepper and 5-spice powder to add a little spice, and to add a touch of corn startch at the very end to thicken the juices a bit. I served this over egg noodles and it was a huge hit with the entire family. We'll definitely be making this again, as it took very little time to prepare as well.
