Lentil Soup with Lemon

This was yummy. I'm never happy with little bits of cilantro, so I used more than was called for and also added an extra Tbsp of lemon juice. Adding this recipe to "the list."

White Fish Provencal

Chicken Chimichangas

I've tried this with both green enchilada sauce and red, and I liked the green better. I always use La Costena refrieds. I use my own guac recipe to top the chimichangas, and I also top with Herdez green salsa and a little more cheese. We love these.

Cajun Seafood Pasta

Hubby told me to put this on the top of the repetitive foods list. It was awesome. I used shrimp, scallops, crab. And I reduced the swiss cheese, because I don't like swiss cheese, and made it up with parmesan. Awesome.

Garlic Broccoli

We love this recipe. I make it at least once a week, because it's my husband's favorite side dish. I do the measurements on olive oil and vinegar backwards. 1/4 cup olive oil, 1/3 cup vinegar. The other way was a little too oily. I also add pine nuts (before or after chilling), and my husband gets cranky if I forget the pine nuts. For the Dijon mustard, I use stone-ground mustard. And I almost always an entire pod of garlic. We're of the opinion that you can never have too much garlic, especially if you both have it. I salt everything to taste, so I'm sure I use more like 1/2 tsp. like other commenters mentioned. But I don't even measure salt, I just salt to taste. Oh, also I usually forget to make this ahead of time and end up only marinating it for 1 hour, which is probably why I can get away with using extra vinegar. It doesn't have to marinate for 3 hours. It's fantastic anyway. Wonderful recipe, thanks for sharing!

Lloyd's Healthy Chicken Zoopa

pretty good, a bit greasy, because i used homemade chicken stock. i used more garlic and spinach than the recipe called for, and Texans love spicy, so i used waaaaaay more hot sauce (Louisiana hot sauce) and added lots of LHS to each bowl. i think in the future i'll use the canned 99% ff chicken broth so it's not so greasy.

Oyster Stew

This recipe is fantastic and so easy to make. For some reason, it's hard to find the fresh containers of oysters here on the Florida east coast, so I've even used canned at times. It's good either way. I used a pint of fat-free 1/2&1/2 and a pint of fully-fat 1/2&1/2 the last time I made it and couldn't tell the difference.
