Italian Cookies I
Thank you SO much, C. Davis! This past Christmas, I wanted to make my Italian grandmother's cookies. I always called them her "Italian cookies." She passed away years ago and my mother passed in 2007. I thought my mother had the recipe in her collection, but she didn't. My aunt also didn't have the recipe although she said she'd look. Meanwhile, I did a search here just for the heck of it and found yours. Quick summary: I replaced the vanilla with anise and mixed a little milk with confectioner's sugar and a drop of anise for a glaze. On Christmas, I gave one immediately to my aunt for a "taste test." Her eyes got really big as she said, "You did it! That's the recipe!" Both her and my brother said how good they tasted! Also: for those wondering, this type of cookie is not supposed to be sweet. It's perfect with a cup of good coffee. These were fabulous and they brought back many happy memories. Thank you!

Pear and Blue Cheese Salad
Absolutely delicious! My husband doesn't like blue cheese so I used our local grocery's brand of "four cheese Italian." (Mozzarella, Provolone, Parmesan, Romano) I also didn't have walnut oil and used light olive oil instead. Overall, it still was outstanding! Proof from my very picky eater hubby: "Is there more?" We have plenty of dressing now and I think we just may have this salad again tomorrow night! Thanks for a great recipe. It's going into my regular rotation. :-)

Swiss Chicken Casserole II
I've been making this dish for awhile because it is simple and quick. But it's always tasted bland to me. I've tried different ways to season the chicken and FINALLY found a great seasoning mix on this site that made a HUGE difference! ("Chicken Seasoning" by Patrick) I also sprinkled some bacon bits on top of the Swiss cheese before pouring the soup mixture. And I sprinkled 2 tablespoons of melted butter over the top of the stuffing before popping it into the oven. Now this dish is a real winner and I'd give it 5 stars with the new seasoning mix! We usually have this dish with a green vegetable, like broccoli. I'm taking leftovers today for lunch! :-)
