Poblano Chile Enchiladas a la Gringa

This is the closest recipe I have found to my favorite enchiladas at our local restaurant! I will definitely make it again. For my personal convenience and flavor, I will use 4 cans of chilis and include cheese inside the tortilla with the chicken (leftover chicken would also be perfect). I happened to have pepper jack cheese and the addition of the jalepeno flavored cheese was phenomenol. I also baked the dish because it felt like a natural step--and I was also a little nervous about the green sauce. I shouldn't have been though. The creamy, chili flavor was outstanding! As a matter of fact, I was wishing there was more sauce, and then wondered if baking had made the dish drier than it should have been. I think next time I will just broil the cheese to brown it, as opposed to baking it. Thank you for this delicious recipe!! I just happened to be making this recipe two days before Thanksgiving, and will use the "Turkey Brine" recipe here by Sheri Gailey. The brine for the turkey recipe starts out the same way as the enchilada recipe, so after I removed the liquid I needed for the enchilada's, I added sea salt to the remaining broth to use for the turkey. Double bonus!

Apple Tapioca Pudding

I gave it a 4 because the flavor was really good, but like the other reviewer, my pudding was more like apple soup in consistency. It could have been my crock pot: I used the kind that doesn't have a heat setting, so maybe I didn't cook it long enough. I wonder if using large pearl tapioca would make this even more interesting?

Black Bean Salad

This recipe creates a lot of salad! I made it to take to a party and served with tortilla chips. I personally couldn't stop eating it. VERY healthy, lots of flavors, textures. Love the cilantro.

Whole Grain Breakfast Cookies

Yes, these came out a bit crumbly, but I did not make them to replace regular chocolate chip cookies. I am a single working mom with four kids and wanted something healthy they could grab for breakfast that wasn't loaded with the sugar and artificial stuff they put in store bought breakfast cookies. I made a double batch and stored the cookies in my freezer in a plastic container, which helped the cookies keep from falling apart. Initially, my children were skeptical and hesitant, and, while none of them would admit to loving them, the cookies certainly disappeared awfully fast! I will definitely make again. Thank you for sharing this recipe!

Cabbage Fat-Burning Soup

This has five stars because it is so healthy. It makes a tremendous amount of soup, so I put individual servings into freezer bags and froze it for later. I have made this twice and added garlic and hot pepper the second time to season it up a bit.

Slow Cooker Lemon Garlic Chicken II

This is actually a very good chicken recipe--lots of flavor and a bit different than the usual. Four stars is simply because the lemony flavor did not appeal to my family as an entree, but I can definitely see using this chicken in other recipes, such as chicken salad.

Eggplant Casserole

I've made this twice now. Both times, without the beef. It's probably good with the beef, but I wanted to taste the eggplant more. I follow the rest of the recipe, except saute the veggies in butter (Smart Balance). My other two additions are mushrooms (to replace the meat and cuz I love them), and garlic powder, because I love garlic. The breadcrumb mixture is the coup de gras, as it compliments the flavors and adds a little texture. Love it!

Chicken with Rice and Gravy

I love chicken cooked this way! I used Smart Balance instead of butter, and I used instant potatoes because my kids prefer them to rice. The gravy turned out fabulous, but I didn't make enough of it. Can't wait to make it again!!

My Mom's Good Old Potato Salad

Generally, I am a colossal failure at potato salad. I just can't seem to get the flavors right. This recipe, however was a winner!! Easy and it tastes great....and I'm not even a big fan of sweet pickles. Not sure if it made a difference or not, but I boiled potatoes and eggs yesterday and refrigerated them until I was ready to make the salad today. I also used mayo, not Hellman's. Now that I have a great base, I feel more confident to try other flavors, like dill pickles, etc. Very happy, thank you!

Chocolate Cake Doughnuts

If you're hankering for choco donut and will try this recipe despite bad reviews, here's how I was able to get this recipe to work: After chilling dough 30 min, "dough" resembled "batter", so I put a medium amount of flour on the counter. Then, I used rubber scraper to scoop half batter out. Then I sprinkled flour on top of batter and used fingers to lightly press dough out. I floured biscuit cutter, cut shape, and scooted shape away from batter while still in cutter. Then, I used a liter bottle cap to create hole. I used a floured, heat-resistant spatula to slide under donut shape and slide into heated oil. After frying first batch, I decided donut resembled deep-fat fried, light and fluffy, chocolate cake. The flavor was supreme, but I wanted something easier to work with and denser. For the second batch, I used remainder of first half of batter. I worked about 1/8 c. flour into batter and used a smaller biscuit cutter, which helped make dough manageable and kept donut shape better. These changes brought this donut closer to fulfilling my expectations. I think with second half of batter, I will try to mix in 1/4 c. of flour before turning it out onto floured surface, aiming for dough similar to gingerbread cookie dough, and fry it at a temp higher than 375. These donuts absorbed more grease than I like, but flavor was still good. We ate them without icing.

Slow Cooker Tender and Yummy Round Steak
