Glazed Meatloaf II

I never liked meatloaf...until this. I followed the recipe exactly, and this meatloaf will now become part of my regular dinner rotation.

Pepperoni Caesar Pasta Salad

Very simple but the Caesar gives it a nice kick. I like to use up any leftover veggies by throwing them in the mix. Cauliflower and carrots are nice additions for texture.

Slow Cooker Chicken and Dumplings

4 stars as written, but 5 stars with modifications suggested by other reviewers, namely (1) only use one can of biscuits; (2) cover with chicken broth instead of water; (3) cook biscuits for two hours, not 30 minutes; and (4) add pepper, cumin, and parsley to season. Overall, very easy and tasty recipe.

Easiest Eggplant

This is a simple base recipe, but I didn't enjoy eating the end result by itself. This dish is screaming for an accompanying dip or sauce, such as marinara.

Curried Chicken with Mango Rice

Wow, this was delicious--I know I'll make this over and over again! For such a fast, easy dish, I didn't expect it to have such perfect flavor. The mango and curry combination is divine. As others suggested, I cubed the chicken and added more curry powder. I didn't have wine, so I used all chicken stock in place of water and wine. Next time, I might try adding crushed red pepper to give it a tropical heat.

Greek Lentil Soup (Fakes)

While the flavor was OK, it needed a lot of salt and pepper and would have been entirely bland without the drizzle of vinegar at the end. Because of the high amount of olive oil, I had the unpleasant sensation of drinking a bowl of oil.

Cola Onion Pork Chops

Although the pork chops were tender, they were extremely bland. What flavor they did have was overpoweringly sweet from the onion and cola mixture, a very odd flavor. Maybe preseasoning the chops would have helped. I appreciated how easy it was to prepare this recipe, but I wouldn't make it again.

Easy Asparagus

Breaded Parmesan Chicken

Very good with lots of flavor! This recipe has become one of my chicken stand-bys. I like to use crushed up garlic croutons as the breading.

Honey Ginger Shrimp

This was quick and easy and would have been fantastic but I hadn't expected the dish to be so lip-burning hot. I'll definitely make this again but use much less red pepper. I served this over a bed of store-bought butter & garlic pasta and it was almost restaurant quality.

White Chili with Ground Turkey

The cinnamon makes this very interesting. Hearty and filling but not very heavy like tomato-based chili. I added corn and reduced the chicken broth to make it less soupy. Garnished with cheese, tortilla chips, and sour cream.
