Sweet Potato Pecan Pie by EAGLE BRAND®

Absolutely delicious! I followed this recipe to a T, except for the grated orange rind (for some reason I can't zest to save my life). I made 2 of these pies for our big Thanksgiving get together last year and everybody loved it! I didn't find out until later, but one of my uncles actually took the second pie and hid it in the trunk of his car after he tasted it. He just called me yesterday and told me to please make sure I make him his own personal pie this year, lol :0)

Green Slime Smoothie

Delish!!! I followed this recipe to the T, the first few times I made it and the smoothies tasted great! I definitely don't taste the spinach. My only problem was I had to fight w/ my blender just to to get it to blend everything together. I could eventually get it done, but it just took forever. My sister finally told me that my problem was that I didn't have any liquid to help the blender process the ingredients. So I've started adding 3/4 cups of pineapple juice to the recipe and voila! No more fighting with my blender and the pineapple juice makes the smoothie even tastier! Thanks for a great recipe, Janet.

Southwestern Caesar Salad

Absolutely delicious! I made this salad to go along with the steak and potato Father's Day dinner we fixed for my Dad. I followed the recipe to a T and everyone loved it! My Dad even said that was the best part of the whole meal! I know that some reviewers felt that the dressing tasted too mayonnaise-y, but I didn't find that to be the case at all. I think you have to be careful and make sure that you use the grated Parmesan cheese (comes in the canister and looks like a powder) when you're making the dressing. Then use the shredded Parmesan (out of the refrigerated section) to sprinkle on top of your finished salad. Most delish! I think next time I'll add the corn and black beans, too. That sounds really good.

Truck-Stop Buttermilk Pancakes

Okay, so I have never felt compelled to write a recipe review before, but after making and (better yet) tasting these pancakes I just had to write a review! I am a pancake fiend and have tried just about every pancake mix there is, but I was never fully satisfied w/ the results. Well, that's all behind me now because this recipe is a keeper! The pancakes come out so light and fluffy and utterly delicious!!! I've made this 4 times now for friends and family and everyone raves about them and asks for the recipe. Also, the last couple of times I made them I added 2 tbsp each of milled flax seed and wheat germ; it doesn't change the taste at all and it adds a little healthy twist to it!
