Fiesta Shrimp Creole

This is a very good recipe we all liked it. I did add the hot pepper sauce and next time I will leave it out...I find it empowers the dish a little.

Parmesan Chicken II

Reviewed: Dec. 8, 2006
Very good recipe, I used thighs and added oregano for a little more flavor because some reviews said that it was a little bland.

Sweet and Sour Meatballs II

Reviewed: Sep. 13, 2006
We thought these were superb. However, I did cheat, I used store bought meatballs because I was pressed for time and that I did not have any of my homemade frozen meatballs left. I always make a bunch cook them in the oven then freeze theme in individual meal servings. All I have to do is make the sauce and that takes just a few minutes. We really liked the flavor of the sauce and there was plenty of it to pour over rice. Thanks Cathy.

Chocolate Zucchini Bread I

Reviewed: Sep. 8, 2006
Nice bread. My husband had no idea it was zucchini bread, when I told him he was like ‘NO WAY’ I don’t know if that’s good or bad, either way it’s very good bread. Reading the reviews is very helpful because I had no unsweetened chocolate at home and I searched the reviews if someone had used something other then that, and I finally found people who used cocoa. Turned out great, 3 tablespoon of cocoa and 1 tablespoon of butter per square.

Beer Butt Chicken

Reviewed: Sep. 7, 2006
I’ve made this chicken quite a few times over the summer and we love it. I have tried several seasoning on it like poultry seasoning, sage, savory, paprika but our favorite is BBQ chicken seasoning. I always put an onion in the cavity of chicken and lots of chopped garlic in the beer can.

Bean Quesadillas

Reviewed: Sep. 1, 2006
I tried this recipe because of a meal idea posted by Melissa it’s called Easy meatless Mexican night. We loved it, it’s soooooo good. I must confess I did put a bit of chicken in mine; I cooked my chicken breast with a bit of taco seasoning mix. We had with these superb Quesadillas the Spicy Mexican Salad that was in Melissa’s meal idea. What a wonderful supper we had. Thank you Jennifer Orriss for the Superb Quesadillas.

Spicy Mexican Salad

Reviewed: Sep. 1, 2006
Loved it, loved it. We used Ranch because that’s the kind we like and a reviewer said it was good with Ranch. We put the sauce on our individual plates so we all could choose, as little or as much, as we want. The same with the corn chips. I will be bringing this salad for lunch often now; I will put the dressing and chips in different containers and toss when I’m ready for lunch.Oh ya forgot to tell you it's not spicy.

Exquisite Pizza Sauce

Reviewed: Aug. 30, 2006
If I make it again I will cut down on the spices, I have never had a hot pizza sauce… I used corn syrup because I had no honey and I added more then called for, until the bitterness from the tomato paste was gone.

Honey Ribs

Reviewed: Aug. 30, 2006
They were good and I liked cooking them in my slow cooker but I think I will stick to my way of cooking them. I boil them till they are tender take them out of water let cool, once cool I saturate them in my favorite BBQ sauce and refrigerate all afternoon, I fire up the grill and cook till hot.

Broccoli and Cauliflower Casserole

Reviewed: Aug. 26, 2006
First off I didn’t have cauliflower so it was broccoli casserole. I steamed my broccoli over my rice as it was cooking. I used about three rounded tablespoons of cheese spread because that’s what I had at home, and I also used 3 cooked chicken breast to make it a meal. Oh! And I did not use the crackers, the casserole is really good without it why add all those calories if you don’t need them.

Mexican Baked Fish

Reviewed: Aug. 26, 2006
Good fish. The salsa does overpower the fish a bit but it’s still a nice and different way to eat fish. I just added about half of the cheese and just a little bit of crushed tortilla chips for different texture. I didn’t use avocado or sour cream.
