Slow Cooker Texas Pulled Pork

This was WAY too sweet for us. I'd make sure to watch the sugar vs. your choice of bbq sauce and the amount of sweet that will add to the taste. Also, be sure the pork has very little fat covering it - I don't frequently make BBQ in a crock pot and ended up with a much fattier liquid than I wanted. I would also dice and not chop the onion so it cooks down more. This was not my favorite recipe, I wanted more smoky bbq flavor with the ease of crock pot cooking. I'll keep searching for one I like.

Anika's Cheesy Green Bean Casserole

I have made the traditional green been casserole before but when I got married I stopped as to my dismay my husband HATES green veggies....decided to try this recipe as I was craving the casserole and I LOVED IT! Sorry, but my husband still wouldn't try it, but I think if he did he'd like it! I used fresh green beans and blanched them - don't cook them too much if you like them with a little more bite (as I do - I hate mushy green beans) b/c they'll further cook in the oven in the soup mixture. I couldn't find BACON cheese spread, but mixed crumbled bacon into regular cheese spread and spooned that on top. It was so good! I am not a processed cheese devotee but once in a while it's yummy - in this especially! I'll make this again.

Coconut Sweet Potato Bake

Really great. Halved this recipe and half of the coconut was too much....use 5 oz or so instead...My marshmallows deteriorated too during the final bake...it was still amazingly good and the flavors perfect! Will make again for sure with a few modifications.

Cranberry Orange Cookies

EXCELLENT! These were fantastic....like my favorite cranberry orange scone in a cookie. Better the 2nd and 3rd day after baking! My husband loved them too. Skipped the glaze this time as they were sweet enough, but they look so good glazed I may try it next time!

Campbell's Kitchen Creamy Chicken Enchiladas

Mushy tortillas, sloppy topping, and looks terrible!! The filling was the only redeeming part. I used a leftover grilled chicken breast and tore it into strips, mixed it with the picante and cheese and added fresh chopped cilantro. I then filled the tortillas with it and should have just used a regular enchilada sauce and cheese topping instead of that unappealing soup topping, but I saw that there were a ton of reviews saying this was good and I'm staying in a beach house right now with limited kitchen resources so I used what was here....will not make this again.
