Pumpkin Soup the Easy Way

I made this soup with a fresh pumpkin, I cut into half, deseeded and rubbed with melted butter, then baked for about 40 minutes until golden. I scooped out the pumpkin and and combined with the broth. I also added a cut up and roasted ruderbager for a extra bite of flavor as pumpkin is a very lightly flavor vegetable once baked. I had my doubts about the flavor when I first made this soup. I made in the morning and reheated it that evening and all the flavors had blended together. It was wonderful.

Artichoke & Spinach Dip Restaurant Style

All this tasted of was the container of Alfredo sauce. If that's what your looking for, great. But I wanted that creamy restaurant style, which this was nothing like. Will continue my search for a good Dip recipe.

Sweet and Sour Smoked Sausage

I used chicken instead of sausage, and added some chunks of fresh pineapple and fresh tomato along with the other fresh ingrediants. I used about a half of the bottle of sauce to just coat the veg and meat without it being too over powering and it was perfect.

Chuck's Favorite Mac and Cheese

I've made a few mac & Cheese recipes from this site. This one has been the easiest and tastiest so far. As for the breadcrumbs, I used Panaku (it was all that I had) and it gave a REALLY extra crunchy topping, which the husband loved.

Tourtiere (Meat Pie)

I was actually looking for a plain English pie recipe when I came across this one. I omitted the cinnamon, bay leaves, cloves and nutmeg, as I just wanted that Meat and Potato flavor. It was excellent, just what I was looking for. My 3 year old gobbled it up too!!!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Superb way to cook the ribs. I did not make the actual marinade but oven cooked ribs for 2 1/2 hours prior to grilling made the most tender ribs I have ever tasted. Everyone comments how delicious they were and asked how to get the meat to "fall of the bone. I am heavy handed with the chilli powder on ribs with salt and pepper for the oven and added Jack Daniels BBQ sauce for the grill. Have cooked them this way many times since and always perfect.

Too Much Chocolate Cake

Very easy recipe. I used muffin cups and cooked for 22 minutes for a perfectly moist cupcake and sprinkled with confectioners sugar. Will make again next time someone requires choccy cake.

Baked Lamb Chops

This was so easy to do. I used Panaku breadcrumbs and added a rather thick layer which turned into a fabulous crispy crust, paired with the juicy tender lamb was a wonderful contrast. I served mine with a side of mint sauce. Will make again without a doubt.

Baked Brussels Sprouts

I followed this recipe exactly and it was most delicious. The blue cheese was very complimentary to the sprouts. The whole bowl was gobbled up, everyone wanted second helpings. Will make this again.

Roasted Garlic

I left them longer in the oven so they caramelized and turned brown at the bottom. We squeezed ours onto melba toasts, simple and tasty appetizer!

Roast Chicken with Rosemary

When I made this I lifted the skin of the chicken and placed a good size sprig of rosemary under before cooking. I also placed an extra sprig inside the chicken along with the stuffing. Delicious.

Irish Stew

This was delicious. Such great flavors, I would make this again. I had too much grease from the lamb in my dish, next time I will drain better.
