Alternative Baked Salmon

This is now one of my favorite recipes. If you are not crazy about the taste of salmon, using a stuffing mixture as the bread crumbs really masks the salmon flavor (though my family loves the recipe just the way it is).

Clam Sauce with Linguine

Gyros Burgers

Excellent flavor to the meat (I did increase the coriander and did not have any savory). The meat was formed into mini sausage shapes and baked in the oven at 400 for 12 minutes. After cooling a bit, they were cut lengthwise in half and put into pitas along with tzatziki sauce, red onion, tomato, cucumber, and lettuce. Totally terrific!!!

Blueberry Streusel Muffins

I really enjoyed these muffins - not cakey like so many other blueberry muffin recipes. The steusel on top was a nice added sweetness without making them too sweet. This recipe is definitely a keeper!

Butter Mochi

Hong Kong Sweet and Sour Pork

An absolute favorite in our house. I cannot believe that the sauce I have been trying to copy for years is basically just ketchup, sugar and vinegar! Using the potato starch makes it crunchy yet light. Instead of 2 cups oil, I only used enough oil to cover the bottom of a small pan and, in batches, cooked the pork, flipping it half way through cooking. As well, I did not mix the meat into the sauce but served on the plate beside rice covered in the sauteed veggies and sauce.

Plum Crisp

I loved the taste but did change a couple things. I didn't put the 1/4 cup sugar over the plums as the plums I used were sweet enough. As well, I found the 1/2 cup butter to be a bit much; 1/3 butter drizzled over the entire top was enough. It was delicious and it will definitely be a go-to dessert recipe for me. Thanks for sharing this recipe.

Cranberry Pistachio Biscotti

Delicious! I used a piece of plastic wrap over the log to shape it before baking. Worked well and allowed me to fidget with the shape without getting my hands sticky.
