Cardamom Chicken with Salt and Pepper Crust

French Toast II

This was great!! I scaled it to three servings so I only used one egg, and the ingredients proportions were perfect. I never used brown sugar and nutmeg in my french toast before, but this will now be a staple. I do suggest mixing the brown sugar, nutmeg and cinnamon with the egg first so when the milk is added the cinnamon and nutmeg don't separate and float.

I only made the icing for another chocolate cupcake I made, but it turned out great. I had whipping cream, not half and half, but turned out great.

Vegetable Orzo

Really good, added yellow squash and cooked my orzo in vegetable broth instead of water for more flavor. The balsamic vinegar and lemon juice really make it pop. Will make this again

Eggplant Au Gratin

Thought this was a very good dish. Bought an egg plant at the farmers market the other day and wanted to do something a little different than egg plant parmesan. Next time I will use my home made sauce instead of jar sauce. Hubby also thought adding some diced chicken or putting it over a bed of pasta would be good.

Caramel Apple Pork Chops

Really good, prepared sauce exactly as given except I only used one apple and two pork chops. I sliced the apple, but would probably suggest chopping it. Thanks!!

Out of this World Turkey Brine

Hubby and I smoked a turkey for our 4th of July cookout/anniversary party (yes, we married on the 4th of July). Who says turkey is just for Thanksgiving. This brine added a nice flavor and kept the turkey juicy. Hubby also kept spritzing the turkey with apple juice to keep it moist and the combination resulted in one of the best turkeys I ever had.

Seven-Layer Gelatin Salad

My mom would make this when I was a kid. I wanted to make it for our 4th of July cookout. I used blueberry, cherry and raspberry jellos for a red-white-blue effect. I didn't have sour cream on hand, but hubby bought a ton of Greek yogurt and I subbed that, it worked perfectly fine.

Teriyaki Marinade

Used this on asteak yesterday. I substituted honey for the sugar...I just like honey better with soy sauce and I didn't have any dried onion flakes so I added some onion powder. Really liked it, wish I would have left the steak marinade even more to soak up that wonderful flavor.

I have made this a couple times when I had left over chicken, usually from hubby smokin' a bird on our Big Green Egg. It's a quick come together recipe that uses leftovers and stuff you normally have around the house.

Carnation® Raisin Bread Pudding

Great recipe, especially because I just came home from a trip with some great Italian bread that was a couple days olf from my favorite Italian store and I had no milk in the house buut I almost always have Carnation evaporated milk. I only made a 1/2 batch and think next time I might a little bit more of the spices, but it was still wonderful.

My review is probably not 100% fair because I left out the onions and parsley and chives, because I was looking for a recipe just to use up some fingerling potatoes I had and roasting them then adding the blue cheese was just wonderful!! Will try again making the recipe as written, I'm sure it would be fabulous!

Honey Baked Lentils

I really liked these. I've been trying to encorporate more lentils in my diet and this was a great recipe for all. I did cut the recipe down to 2 servings and thought it still served at least 6 so you may not want to trust the serving size.
