Bacon Popovers

Reviewed: Aug. 4, 2014
Made these for breakfast last month when friends came to visit. The guys loved them. I love them because they are simple and we had left over bacon from the day before. Will make these again.

Easy Swedish Apple Pie

Reviewed: May 25, 2009
This is great...and easy. I used way too many apples and should have laid them down neater so it wasn't so lumpy, but that's my fault. Can't wait to try it again, this time I'll use less apples and be a bit more methodical about it.

Kentucky Pecan Pie

Reviewed: May 25, 2009
This was my first time making pecan pie, I didn't know it was so easy. I did use half dark corn syrup and half light, but other than that I followed it exactly, came out great!

Asian Sugar Snap Pea Appetizer

Reviewed: May 31, 2009
Hubby and I both loved these. We got fresh sugar snap peas from the local farmers market and this was the perfect recipe for them...and quick. Watch those peas under the broiler. This will be one of my go-to recipes.

Pineapple Crisp

Reviewed: May 31, 2009
I really liked this! I made it exactly as written. I don't think I would want the bananas as many people have mentioned, but that's me. One thing I would add would be possibly a 1/4 cup of chopped pecans or walnuts to the filling just to give it some crunch...but again, that's me. I'm going to give that a try next time. Thanks for a great recipe.

Garlic Chicken with Orzo Noodles

Reviewed: Jul. 10, 2009
Hubby made this for dinner, it was really good but my only suggestion is to salt the water like the sea as Mario Batali. Lightly salting = under seasoned orzo.

Cheesy Salmon Pasta

Reviewed: Jul. 20, 2009
I absolutely loved this...but I will first say that I did not used canned salmon, I used 12 oz. of grilled salmon that we had left over. I substituted Ronzoni Bow Tie pasta for spaghetti but everythng else I followed exactly and it was a wonderful meal. The flavor is just splendid. Thank you!

Cranberry Pecan Muffins

Reviewed: Nov. 24, 2011
Very good recipe, I used fresh cranberries, cut in half, and I used a full cup. I used what my hubby and I call my big- muffin pans and got six of those and six regular muffins.

Broiled Tilapia Parmesan

Reviewed: Aug. 14, 2009
Made this for dinner last night and hubby really liked it. I made it exactly as written exacpt I cut it down to two servings and used the toaster-oven broiler instead of heating up the whole house with the regular oven. We had some frozen tilapia filets that were of mediocre quality and have been putting off using them becaus of that so I searched for something flavorful to dress them up, this did it, those filets will now be gone in no time. Thanks!

Fried Rice Restaurant Style

Reviewed: Aug. 15, 2009
This was great, and easy. I actually used frozed peas & carrots which worked out just fine. The rice I used was a Jasmine rice which really made it taste good. I think I may even toast some sesame seeds to put on in the future. This has now become a staple in my house.

Jay's Signature Pizza Crust

Reviewed: Aug. 18, 2009
I prepared the crust exactly as stated in the recipe but I think I had to add at least a cup if not a cup and a helf more flour just to get the dough out of the sticky phase. I got two crusts out of it and I really only wanted one, so you can easily cut the recipe in half. I must say though the flavor was wonderful and it baked up nicely rising beautifully in the oven and getting a nice golden brown, crispy yet still a little chewy. Thank you.

Exquisite Pizza Sauce

Reviewed: Aug. 18, 2009
This is now my official pizza sauce. I used this with another recipe from the site, Jay's Signature Pizza Crust, and they work well together. I followed the recipe exactly even searching out anchovy paste in the grocery store. I wouldn't change a thing. I got more sauce than I needed for one pizza, but probably not enough for two. Although I don't like a whole lot of sauce. This was great! Thank you.

Fluffy Peanut Butter Frosting

Reviewed: Aug. 29, 2009
This was really good. I made the recipe exactly as written and it came out perfectly. Today was my husband's birthday and he wanted brownie cupcakes with peanut butter frosting. So I used this for the frosting and another recipe on the site called Brownie Cups. They were perfect together. If anyone had problems with this being greasy make sure you use butter, not margarine and do not over soften. I used about 3 1/3 tablespoons of milk and it was the perfect consistency to pipe onto the cupcakes. Thanks!

Baked Asparagus with Balsamic Butter Sauce

Reviewed: May 15, 2009
I am not much of an asparagus fan, but this has changed my mind. I followed the recipe exactly, but I will alter a bit in the future according to some others suggestions by adding more vinegar and less soy sauce and brownig the butter a bit more.

Brownie Cups

Reviewed: Aug. 29, 2009
Today was my hubby's birthday and he wanted brownie cupcakes with peanut butter frosting. I used this recipe along with another recipe from the site, Fluffy Peanut Butter Frosting. They go great together. I did cut the recipe in half and additionally used 1/3 less sugar but everything else was perfect exactly as the recipe is written. Great recipe! Thanks!

Pesto Polenta Lasagna

Reviewed: Sep. 19, 2009
This was awesome!!! I didn't have any pine nuts, but they probably would have been great to add some crunch, I'll have to make sure I have some on hand next time. I did add a layer of baby bella mushrooms because my hubby and I both love mushrooms and I had them in the fridge for a while and they needed to be used...mushrooms make everything better :-) Thanks so much for a great recipe. I think next time I'm going to try to make my own polenta too!

Gourmet Mushroom Risotto

Reviewed: Sep. 22, 2009
I made this exactly to the recipe but my parmesian wasn't fresh, I used the Kraft grated parm, and it was excellent. This was my first time making any kind of risotto and I couldn't ask for a better out come. I will be making this often. Thank you so much!!

Tuna Noodle Casserole I

Reviewed: Sep. 25, 2009
This was great. I will admit I did substitute bow tie pasta for the noodles because I didn't have egg noodles on hand and I don't like canned peas so I used frozen and I added an extra can of tuna, however, even the base recipe woudl turn out wonderful as well. Thanks!

Grilled Pork Tenderloin with Balsamic Vinegar

Reviewed: Sep. 27, 2009
Hubby and I made this today for a late-lunch/early-dinner, it was great!! He doesn't like balsamic vinegar as much as I do but he agreed he'd like to have this again. I used both rosemary and thyme in the marinade and they really added to the flavor! Thank you!
