Roasted Apples and Brussels Sprouts

Loved this!! Unfortunately we only had one onion on hand, and we used fresh brussel sprouts, and one granny smith apple and one gala apple. We placed everything in cast iron bowls and put them on the grill instead of in the oven, it was awesome!! Loved the little bit of char and carmelization.

Chilled Cantaloupe Soup

I think this recipe has potential. I made it exactly as written an thought it had a bitter taste, but I used Tropicana orange juice and tht could have attributed to the bitterness because the cantaloupe was as sweet as could be. I loved the cinnamon, very nice touch. I'll try again with a different brand of orange juice or a different juice all together, maybe a mango juice...

Spiced Mixed Nuts

This was excellent. I love spices, however, when I was measuring the allspice a bit extra spilled into my sugar mixture...it was still great though. A friend of mine from Pennsylvania always sends me a tin of nuts every year for Christmas. This was the perfect way to add a little snap to them. I used a mixture of pecans, almonds, cashews, and hazelnuts. I like the almonds the best, but that's my favorite nut...next to my husband :-) Don't bother with the greased foil, just use parchment paper. Thank you!

Waffles II

After visiting my mom for Thanksgiving I brought her waffle iron home with me. This was the first recipe I tried and my husband and I were both pleased with it. Nice fluffy waffles. Thank you!

Chicken Soup with Drop-In Noodles

I honestly try to make the recipe as close as possible to the way it's written when I'm rating it. I really hate when people make all types of adjustments then rate a recipe low...what are you really rating then!?!? Anyway, I did not have celery and I used fresh baby carrots instead of frozen other than that, I followed everything else exact on the ingredients list. The "drop in" noodles are more like dumplings so I made mine much bigger than pea-size to represent more of a dumpling than a noodle. I also cooked the dumplings in some broth I stole from the slow cooker and boiled instead of in boiling then dumpped it all back in the slow cooker. I think it gave a bit more flavor to the "noodles" a.k.a dumplings. Over all I though this was pretty good and would definitly use it again.

Ricotta Breakfast Pancakes

Flavor was good and I would make them again, I happened to have some left over ricotta and wanted to try these. I agree with others that the pancake is not fluffy, but a creamy middle and it is a little hard to tell if they are done. Will have to experiment a little, has great potential.

Soft Apple Butter Delights

I'm sorry but I can only give this two stars. The taste wasn't bad, but I lightly greased my cookie sheets and they still stuck like mad. Also, the cookies spread so thin they were almost like pancakes...so sad.

Honey Butter Spread

I wanted to make a nice spread to go with a new cinnamon bread I'm baking, this sounded good and the taste was pretty good too. I added some walnuts to give it a bit of a crunch. I can't wait to try it tomorrow after the flavors had a chance to mix in the fridge.

Cola Pork Chops

The flavor was good, but I give it three stars because 1 hour is too long to cook most pork chops and they gave off a lot of liquid and made the good tasting sauce too thin and runny. I might try searing the porkchops first and browning them before baking them with the sauce next time.

Cold Cherry Soup

As another reviewer said, this recipe tastes way to much like sour cream. I also added about another tablespoon and a half of sugar. I followed the recipe exact except I put my cherries through the food processor for a couple pulses since they were quite large. I went to a B&B a couple years ago that served a cold cherry soup for breakfst and I've never tried to make it myself. I was hoping this would be something similar. I know the soup I had the B&B owner used fresh sweet cherries. I'll chalk this one up and try again.

Carrot Rice

YUM!!! If I could give this more stars I would. Made this twice in one weekend. First time made exactly as written, second time I used Jasmine rice and I think I like the Basmati rice just a little bit better in this recipe. I also didn't think I'd like the peanuts in the recipe but put them in any way...boy am I glad I did, they add just a little bit of crunch that is perfect!

Peanut Butter Banana Bread

This was good. I've had better banana bread, but the peanut butter was a nice twist. I only had a little bit of crunchy peanut butter so I used half crunchy and half creamy. I don't think the full 70 minutes of baking was necessary, my outter crust was a bit crunchy although I used a dark metal pan, maybe a glass pan would have needed the 70 minutes. Thanks for sharing!

Sweet Potato Pineapple Casserole

Made this for Easter. I only used two sweet potatoes, but they were huge, probably more than three regular sweet potatoes. I also used the entire can, 8 oz. (1 cup) of crushed pineapple and thought it was good. Nice sweetness but not overly sweet.

Peanut Butter Cup Cookies

These were great!! I thought I'd try these instead of my old recipe I had that uses shortening instead of butter. I actually got 48 cookies out of this recipe, and I followed the recipe exact. I used my Pampered Chef small scoop to put the dough in the little muffin cups and my Pampered Chef wooden dowel to "stamp" stamp the middle...I just caution, I stamped some too thin and the rim of the cookie pulled off when I tried to pop the cookie out of the cup. The flavor of these is great...and just a side note...it looks like Reese's is making the minature peanut butter cups even smaller!!

Broiler S'mores

This is great! I never thought of putting the marshmallows under the broiler. I saw this on the site right before I was heading to the gym for kick boxing class...I made sure I worked extra hard to earn a treat tonight. I used my toaster over to broil the marshmallows since it was just my husband and I also placed the chocolate on one side of the crackers and popped it in the microwave for a few seconds just to start the chocolate melting. Thanks for sharing.

Lighter Banana Muffins

I don't know how fair it is for me to rate this recipe because I did change quite a bit, so I just want to make that disclaimer. I used 1 cup whole wheat flour and 1 cup all purpose, cut back to 1/2 teaspoon of salt and added an additional 1/4 cup unsweetened applesauce, 1/2 teaspoon of cinnamon just because I like cinnamon and 1 teaspoon of vanilla for the same reason. The flavor is wonderful, the calorie count is the best thing about them and I do agree with other reviewers that they stick to the muffin papers, so I used some papers and some of the aluminum liners, they come out perfect with the aluminum liners so use those or just spray your muffin tin with no papers. With the added applesauce I did not think the muffins were dry at all.

Quinoa with Mushrooms

This was the first time I made quinoa, and I'll certainly be making it again. This was great, also I can see this being a great base recipe for adding other veggies in such as zucchini, yellow squash, spinach, or egg plant. Great when you want to have a meatless dish...use vegetable broth. Thank you!

Strawberry and Feta Salad

This is a great salad except it seems to be way too much vegetable oil in the dressing, I ended up dumping some of it out. I'd cut the oil in half next time.
